    Goodmorning everyone. I had pancakes this morning for breakfast with walden's syrup and 4 pieces of bacon...mmm it was delicious. I found the recipe in out Atkins recipe section but cut out all the extra cream..

    2 eggs
    1 Tablespoon heavy cream
    1 pkg of Splenda
    1/8 teaspoon of cinnamon
    1/8 teaspoon of nutmeg
    1/2 oz of pork skins( use more if you need it)

    mix eggs til they are foamy, add the rest except the bacon rinds..
    crush the pork skins real fine..add to the egg mixture and let set a minute or 2 to thicken a little.
    cook as you do a pancake

    Serving size 1 large or 4 small

    Per Serving: 351 Cal (60% from Fat, 37% from Protein, 3% from Carb); 32 g Protein; 23 g Tot Fat; 9 g Sat Fat; 9 g Mono Fat; 2 g Carb; 0 g Fiber; 1 g Sugar; 78 mg Calcium; 2 mg Iron; 686 mg Sodium; 528 mg Cholesterol

    Hello all,
    Im still on plan, and enjoying my food. That pancake recepie looks good. Why do you need to add bacon rinds? and what are these?

      I meant Pork Skins. they are a carb free chip made from the skin of pork. when crushed they make the pancake mix thicken up...

      the bacon was a side order to go with the pancakes..

        Three egg omlette and two sausage patties for breakfast.

        Left over grilled swordfish for lunch along with a lettuce and red pepper salad.

        Sliced pepperoni and cheese for snack.

        Planning a sensible dinner. Wish me luck!
