I'm so excited to check in... I just had the greatest mishap in the kitchen so far....!!!
So, I was attempting to make stuff zucchini the way my ex's mom used to make it... even though I never watched her do it, so I was trying to figure out what she did...
I hollowed out the zucchini and put them on to boil...
1 lb. ground beef with salt, pepper, green onion, about 1/4c. white onion diced that I had leftover, and about 7 cherry tomatoes chopped went in the other pan to brown...
Then, I remember she had a light reddish orange sauce she used to pour over them... so, I decided to try to match the color with stuff I had, I put on butter to melt in a small pan and blended a small tomato with 1/4c. heavy cream and ten added it to the butter... (THAT SAUCE ALONE IS TO DIE FOR)
So, I boiled my zucchini way too long and they were opening when I drained them... so, I was thinking, 'hmmm... what can I do with these?' Stuffed zucchini lasagna!
I rolled the zucchini out in a small pyrex dish topped with ground beef mixture... put another layer of spread out zucchini topped that with the remaining ground beef and then the final two zucchini's I put face down skin up and then poured the tomato sauce over the top and popped it in at 350* for 15-20 mins....
BEST. MISHAP. EVER.

here - weighed in at 231 today, so down one - yeah. Should be a great day, so looking for more loss tomorrow. Just had a salad for breakfast, with cut up turkey and cheese - man was it good! Might do that more often.

I'm here. Ate perfectly yesterday and drank tons of water. I've really cut back on my coffee the last two days and suddenly my weight dropped back down to 225 from the 228-226 its been hanging our for the last 3 weeks. Here's to hoping it continues to drop. Going to try to get in a little working out tonight but its not likely. Hunny is leaving for interview tomorrow at 6am (flying to Boston) and we have tons of preparations for it (laundry, packing, root touch-ups, nails, going over interview questions, mapping out best route to get back to airport, etc). Might as well just admit that I won't get the chance until Wednesday night. URG!Bellajgw aka Jacqui
