  • Second time around. Having trouble - need advice!!

    Hi all,
Well here I am again, starting over. I lost 50 pounds around 5 years ago and it's slowly all came back to haunt me. At the time time, it was fairly easy to stay on track. I was laid off and could cook for myself everyday. Now, with a the new job I drive A LOT!! I spend most of my time in the car traveling. My question is what is the best thing to est while on the road? Ideas of things I can take with me would be great.
Anyone have a road job and have Atkins success?
    Thanks a ton,
    Dana

Hi Dana, Welcome back to ADBB !!! I had to laugh while reading your post. We are in opposite circumstances. The first time I lost, I was driving all day, now I'm retired and can cook for myself everyday. So this one is fairly easy for me.

First off, get yourself a small personal cooler you can set on the seat next to you. Don't be tempted to get too small, you need it big enough for water bottles and a few plastic containers. I would fill 1/2 dozen water bottles with ice, top off with water, and used that to cool the ice chest and have my drinking water available.

Then some plastic containers so you can have .....
    hard boiled eggs
    deviled eggs,
    ham roll ups
    chicken drumsticks
    celery sticks
    tuna fish salad
    chicken salad
    egg salad
    roast beef salad
    roast beef slices with cheese
    mozzarella sticks
slices of cucumbers w/lime juice & chili powder
    jicama slices
    radishes

And if you MUST stop at a drive through, I would usually choose a hamburger, no lettuce or sauce, wrapped in lettuce leaves.

Hope this gets the ideas flowing for you.

Wow, thanks for the quick response!!

It is funny we are in opposite situations. I didn't have so many problems getting started when I was eating at home. I do have some questions for you about the things you listed. First thing, are these all good things for induction? That's when I'm having my main problem, induction. Once I can figure out what to eat for the first 2 weeks while one the road, I will be fine.
Next question, is the lunch meat you are talking about the deli kind? I thought we weren't supposed to have deli meat? I could be wrong, but I thought I read that somewhere. Do you make the chicken salad yourself? I can make egg salad, but not chicken salad LOL.
Also, did you ever make anything at home that you can just grab quick. Heat and eat kind of thing? I do stop home, but I never have enough time to cook anything right then.
Oh, one last thing before I forget, did you ever find it hard to workout or get in any exercise? I don't know what it is about driving that makes you more tired than anything, ya know?

Thanks again for the ideas, they really help!

Chinadoll - Thanks for the response also, but I don't understand what you meant. Did you mean the things you listed are not acceptable? Sorry for not

Re: Second time around. Having trouble - need advice!!

Absolutely all induction friendly. And all made at home. The only mention of "lunch meat" was the ham and roast beef. I have found that I can find "quality" in both, and if I fib and tell the deli clerk I have allergies, can I look at the labels, they are happy to help. I'm careful to avoid added sugars (common in ham) and of course too many other additives. But usually I cook up a ham or roast in the oven, and I have an inexpensive meat slicer, I slice my own.

The chicken and roast beef salads are easy too. Throw you cooked meat in a food processor, pulse for a few seconds until ground. Then add what you like... spring onion greens, celery, seasonings, mayonnaise, etc..

The grab quick stuff, I love quiches. Fast to make, cut up in serving sizes, throw into baggies. I just finishes off my asparagus quiche... yum. Lot's of them posted on Linda's site. But most of the time I improvise based on what's in refrigerator.

Oh yes, being tired from driving. Absolutely. I would stop at rest stops or even store parking lots and walk laps around the parking area, every hour or so. Got the blood flowing, and got me some fresh air, along with convenient bathrooms for all that water we are drinking. Of course, in bad weather it was harder. So my local super Walmart or Home depot worked. A couple laps around the store (inside of course), and never once was asked if I needed help finding something .

WOW, that's great stuff. As soon as I'm home for a while, I'll go shopping and get myself all setup.
I'm really mad at myself for letting this happen. I loved being able to fit into ALL of my jeans. Now I'm down to about 2 or 3. I just have to get going and get on track. That, I think, is the hardest part. Getting started.
Thanks again for all the advice. I will certainly use it!!
