  • A beautiful start..

    Hii Everyone!

I am re-starting this WOE after a long detour. I am desperately trying to remember what I used to eat for breakfast! I'm not sure why but I am feeling a bit nervous! Can anyone recommend a good starting out breakfast?

Sometimes I have eggs with carb-free sausage and a melted slice of swiss cheese on top. Mmmm.....

A veggie & egg omelet/frittata is always good. Peppers, mushrooms, baby spinach, tomato all go great with eggs. Add some cheese if your daily menu allows.

p.s. For on the go breakfasts, many pair up veggies & eggs in a crustless quiche.

You don't have to eat the same things you ate last time. Are you familiar with the Acceptable Foods List?

I often eat eggs and veggies for breakfast.

i usually make fry a vegie concoction...mushrooms spring, onions, baby roma tomatoes, sometimes bacon and then throw in some beaten eggs and black pepper...if Im in a hurry I always have hard boiled eggs in the fridge and have them with butter...not quite as yummy but a good stand by

I know I had to run back thru my memory to remember it all again....I am a college student (late in life) and am planning ahead for my breakfasts...I just made a bunch of egg muffins to freeze for my early morning runs to college. Basically just eggs, chopped cooked bacon, chopped cooked LC sausage, shredded cheese, green onions and seasonings. whip together and bake in greased muffin tins in a 350'F oven for about 20-25 minutes. I let them cool and put into a freezer bag. On those early morns I pop 1-2 into the micro and heat for a few and head out the door with them.
Other mornings, I sometimes have leftovers or omelets or just bacon & eggs. Shoot...if you can afford it, you could have a ribeye steak if you wanted for breakfast or make chicken or steak fajitas and eat with a fork instead of a tortilla! (been there, done that) giggle~

Yeah, good call on the steak for breakfast idea. I eat it with a fried egg on top. Heck, you can even do pork chops and eggs. But yeah, I do add veggies on the side too. That kind of power breakfast gets you through quite well.

You guys are the best! Thank you! It is so nice to know that even though most of the people around me are pretty resistant to this woe (hubby and friends in particular)...I still have great people to turn to!! Looking forward to tomorrow and a fresh start!!

                      Re: A beautiful start..

This AM my hubby made me breakfast, he chopped up 2 HB eggs, chopped up 2 slices of sugarless/nitrate free ham and 1 slice of cheese melted on top.
It was yummy and just enough to take my vitamins.

Eggs are the simple choice - there are TONS Of options for making them differently so you don't get burnt out.

I eat bacon and sausage sometimes but I have to buy them at Whole Foods or Sunflower Market here, I can't find any w/out sugar or nitrates are the grocery stores here.

I usually try and add a veggie too, this AM I obviously didn't.. lol.

Good luck!!! Don't be nervous - be EXCITED!!
