    THANK YOU! You helped make my cauliflower taste really good! I don't think i need to mash it up anymore, that cheese sauce really really helped!
    my next new battle with veggies: Broccoli! Will make some cheese sauce for that too

    That was me and you're quite welcome!! I made it one night and put it on my cauliflower - well my sister stopped by and saw it on my plate and thought it was macaroni and cheese! She says, "I didn't think you could eat macaroni??!!" I told her it was cauliflower and cheese sauce, but that it was an excellent and healthy substitution for mac n cheese! :yes She said, well it looks good, I might I have to try and like cauliflower!

        How about I just post the recipe again? :wave

        1 tablespoon butter
        1/4 cup heavy cream
        Cheese - I use cheddar - shredded

        Put the cream and butter in a sauce pan and melt the butter over medium heat. Start adding the cheese and stir (I use a small whisk), adding more cheese until it's the thickness/consistency you like!

        That's it!

          I made something like this last week and didn't use any butter. Worked out fine, but didn't reheat well. I'll try the butter next time (like, tomorrow!)

            Its similar to my alfredo sauce. Basically it's the same except I use grated parmesan instead of cheddar. I love it on broccoli & chicken!

            I'll play around with different cheeses for different veggies. I don't think I'd like the alfredo on cauliflower, but a cheddary sauce would be YUMMY!

              oh i used about an oz of mozerella and an oz of cheddar...it was soooooooo good!!!!!!!! any other veggies you eat with it?? im trying to try new things! gonna do some broccoli but then i need some more ideas! i know its bad to have so much cheese, but im not going over daily intake...just no cheese in any other meals. Oh yeah i find frozen veggies SO much easier to deal with...about once a week i tend to accidently hurt myself in the kitchen! Last week i chopped my nail (fake nail) off with a parking knife while chopping tomatoes, and tonight i got a really bad steam burn when i took my cauliflower out of the microwave and pulled the plastic wrap off the bowl!

                Yep, it's very versatile. I have sauteed boneless/skinless chicken, (cut into bite size pieces) in butter/olive oil, then added a can of Rotel Tomatoes to it. Then I make the cheese sauce using Pepper Jack cheese. I spoon some cheese sauce over the chicken/tomatoes and it is YUMMY!!!! :eating

                Hey, I think I will make that for my supper tomorrow night! :yes
