Ground meat. You can saute the ground meat with herbs and spices of your choice to make taco meat, burrito meat, etc. Use a large lettuce leaf as your "tortilla".

Chicken breast: grill, cut into strips, season with lime juice, chili powder, etc. Roll into a large lettuce leaf with fajita toppings. Same thing can be done with beef or pork.

    Stir fries:
Meat of your choice, marinate in toasted sesame oil, ginger, salt and pepper. Stir fry with veggies.

      An excellent site for recipes:

the induction ones are marked witha '*'. she has also tried them all and lets you know how it honestly turned out.

My favorite induction one was the italian casserole:

      ITALIAN CASSEROLE
      1 pound ground beef
      1/2 pound Italian sausage
      1 clove garlic, minced
      2 tablespoons onion, chopped
      1/2 pound fresh mushrooms, sliced
      8 ounce can tomato sauce
      Salt, to taste
      1/8 teaspoon pepper
1/4 teaspoon Italian seasoning, or to taste
4 ounces mozzarella cheese, shredded, 1 cup

      Topping:
      1/2 cup sour cream
      1/2 cup mayonnaise
      1/2 teaspoon garlic powder
      1/2 teaspoon pepper
1/2 cup freshly shredded parmesan cheese
4 ounces mozzarella cheese, shredded, 1 cup

Brown the meats along with the garlic, onions and mushrooms; season with a little salt and pepper. Drain fat; stir in remaining ingredients. Adjust seasoning if necessary and put in a greased 7x11" baking dish.

Combine topping ingredients and spoon over surface of meat mixture. Spread evenly with a spatula. Bake at 350º about 40 minutes until topping is nicely browned.

      Makes 8 servings

        Mexican Casserolle, by JoanOH
        Super easy and very good!

        MEXICAN CASSEROLE
        1 lb ground beef
        1/4 cup diced onion
        3 eggs
        1/3 cup mayo
        1/3 cup heavy cream
        2 tbsp chili powder
        1 tbsp cumin
        1/2 tbsp oregano
        1-2 cups shredded cheddar cheese
1 can (4.5 oz) green chili peppers, drained

Brown hamburger meat and onions, drain and add 1 tbsp cumin, 1 tbsp chili powder, oregano (I use more of these spices than this because we liked the stronger flavour) and drained can of green chilis to meat mixture. Put in a buttered (or Pam-sprayed) casserole dish. Mix eggs, mayo, heavy cream and 1 tbsp chili powder. Pour gently over the meat mixture. Top evenly with shredded cheddar cheese.

Bake at 350 for 30 minutes. Serve with some shredded lettuce and a tbsp of sour cream. 4 servings.

Here is my all time favorite, hey aren't hard to make but do take a little time...they are so worth it though if you like the stuffed mushroom from olive garden that are served as an appetizer. They come out tasting exactly the same.

                  8 medium mushrooms
1 6oz can of minced clams
                  1 Tbsp red onion minced
                  1 egg
                  1/2 tsp minced garlic
                  about 8 plain pork rinds
                  1 tsp oregano
                  1 Tbsp softened butter
1/4 shredded parmesan cheese (not the kind in the can)
                  1/2 cup mozz cheese
                  1/4 cup melted butter

                  preheat oven to 350 degrees.

Remove stems from mushrooms and wipe tops with a damp towel if needed. Do not run under water, it will toughen the mushroom.

Drain clams. Mix together clams, onion, garlic, parmesan cheese, mozzerella cheese, and butter until well blended. Put your pork rinds in a food processor until they are the consistencly of bread crumbs, they should equal around 1/4 cup once processed. Throw in some Italian seasoning mix while they are processing...I only used about 1/4 tsp. Mix in these pork rinds, and the oregano. Place your mushroom caps in a small buttered baking dish. Divide the stuffing among the mushroom, placing it in the well. Pour your melted butter on top of the mushrooms. Cover and bake for 40 minutes.

Remove from oven and sprinkle some more mozzerela cheese over the top. Eat while hot. SSSOOOOOOOOO YUMMY!

For all 8 here is the nutritional info I came up with through fitday. (I could only eat 4 before getting full)

here's my fav so far! SO yummy..can't even believe it's legal it tastes so good! I made it last night

                    Bacon Cheeseburger Quiche
a.. 1 lb. very lean hamburger
                    b.. 1 small chopped onion
c.. 4 slices crisp-cooked bacon, chopped in bits
                    d.. 3 eggs
                    e.. 1/2 cup mayonnaise

                    f.. 1/2 cup half-n-half
g.. 8 oz. shredded chedder or swiss cheese
h.. garlic powder to taste (optional)
                    i.. white pepper

                    How to Prepare:

Brown hamburger in skillet with onion. Remove and mix in bowl with
bacon pieces, breaking up any larger clumps with a fork or pastry mixer
until you have a fine mix. Drain well of any excess grease and press into the bottom of a deep-dish pie pan. Set aside.

                    Preheat oven to 350°F.

Combine remaining ingredients in mixer bowl and whip well. Pour
mixture over beef "crust" and bake 40-45 minutes until top is browned and
                    "set".
Cool 15- 20 minutes before slicing. This can be packaged in Ziplocs or
plastic containers for meals quickly microwaved over the next 3-5 days. (Does not freeze well, though.

                    Serves 6. 2 grams per serving.[/b]

how many g's of fibre? if it's 55g of carbs ad you make 8 servings (it makes alot) that' 6.8 before fibre.

so it will be fine..unless you were planning on eating the whole thing in one sitting? LOL :yikes

HA! ummm..yeah I ate 3 servings...I couldn't help myself!!! it was SO good! hehe i was a little more full than usual, but I wouldn't say STUFFED. But I was just at 20 carbs for the day so I had a little room to pig out a little...which wasn't really pigging out, just went back for more :-p and the servings were kind of small anyways. Best recipe ever though. I got some leftover for dinner tonight :-p
