In a saucepan, melt 1 tablespoon butter and about 1 teaspoon horseradish (can use less).
Add 1 cup of raw spinach leaves.
Sautee until just slightly wilted.
Remove from heat.
"garnish" with a couple of drops of vinegar and a large pinch of flax seed.
Serve warm.
