  • Portable breakfast on induction?

One big problem I have is that I go to the gym in the morning and have to come back home to make breakfast and get ready.

If I could get ready at the GYM I think I could shave 2 hours off my commute.

For example today I woke up at 6AM but got into work at 10:30 AM. Its a big problem.

The issue I'm having is that all the atkins recipes that I can think of are not portable. For example I can't really make eggs in my car/train or at work.

Can anyone think of any recipes that I could use to have a more portable atkins breakfast?

You could scramble some eggs and put them in a tupperware container to eat after you work out.

You could make a flax seed muffin or flax cracker and top it with cheese.

You coudl bring a tupperware container of devilled eggs.

I often carry a container of breakfast cheesecake or quiche with me.

You might try those....I know other people also have some good ideas!

      Try this:

I've made these a few times. They're very portable. They have a breadlike consistency, so you can eat them with your hands (plate & utensils not necessary), and they're equally good hot OR cold.

Crustless quiche: you can make it ahead of time (like on a weekend) and keep it in the refrigerator. Moreover, you can vary the flavors so you won't get bored "eating the same thing".

For "easy" eating, bake it in a square or rectangular pan and cut them into bars or squares. You can wrap them individually in plastic, and grab one on the way out your door.
