  • Breakfast Ideas

    I have started Atkins in the past and found the board very helpful. However, I had a hard time with breakfast. Can anyone give me some ideas.

    Breakfast can be whatever you want it to be!
    This morning I had two boiled eggs and a stick of pepperoni.
    Some days it can be warmed up leftovers from last nights dinner. I always make extra for lunches and breakfasts. One of my favourites is to make up meatballs, bake them, and have a few of those with my boiled eggs. I like boiled eggs because they are easy to do the night before and they're quick to peel in the morning.
    I remember someone on the board who enjoyed taco salad for breakfast...egg salad, tuna or salmon salad or chicken salad eaten with a celery stick would be really tasty too.
    If you have time and the inclination to cook in the morning, and if you're skillfull (I'm not..lol) make an omelette with veggies and cheese, and if you are like me, just saute the veggies and scramble eggs into it, sprinkle cheese on top.
    Basically review the Acceptable Foods list and pick what you like to eat.

        I try the same as America57, if you have a crustless quiche or something yummy on hand then I can grab and go. This keeps me from going to work hungry and making mistakes.

          The days I find I forgot to plan ahead and cook something the night before I just have meat/cheese rollups and a 1/4 cup of cherry tomatoes. If you always get things like sliced meat and cheese you always have something to eat or snack on that is 'legal' waiting in the fridge!!

            Something I thought of this morning... make Thai food... . The recipes are hard but believe it or not its a good breakfast. Spicy and wakes you up. Also since its exotic it doesn't really seem that strange.

            I got used to it when I was in Thailand a few months back. There is no concept of breakfast... you just order whatever you want.

            I think I'm going to make something with prawns... There's this killer vietnamese dish where you can make a crepe (without any carbs) with catfish, mung sprouts, and lettuce.

            I might have to get a recipe up online when I make it.
