Just checking.....I know that you aren't suppose to have anything that is not on the acceptable foods list during induction but I also heard that if something has 0 carbs (like Pork Rinds) that it is OK. Is that true?

Pork Rinds are ok because they are just fried pork skins, which is on the acceptable foods list. There are some foods like mayo that are not clearly listed as an acceptable food, but it is acceptable because all of the ingredients are on the list (eggs, vinegar, oil). There are some things with 0 carbs that are not acceptable. An example is the sugar free jello. This is a no-no because it is sweetened with aspartame (page 124 DANDR).

When in doubt, post it here and you'll be answered!

Limit your pork rinds due to their high sodium. They will cause you to retain water ...

Pork rinds are supposed to be the low carb "chip", aren't they? I especially like them when I have munchie craving. I personally like the spicy ones and sour cream as a dip. Hmmmm.... You do have to limit them though.

There are other snacks you can have that are "zero-carb" but it depends on what they are made of. Pork rinds have a certain amount of protein in them and if you do eat too much, they (the protein in it) can possibly convert to carbs ie excess proteins are converted to carbs.

Try out pork rinds and see how they affect you. Even though we can give you the go ahead and tell you these are induction-friendly foods, but like SF jello, even though pork rinds have no carbs, for some of us, they can slow weightloss, and in the case of pork rinds they could increase your water retention because there is quite a lot of salt in pork rinds.

But like I said - try it out, see how it affects YOU, jtharp.

Be mindful that the flavoured ones may contain sugars, so as always, read the labels.

I like to use a few pork rinds to scoop up tuna salad. Sounds disgusting, but it's surprisingly good.

And you can also crush them up and use them for 'breading'.
Wondering how to get 'most' of your net carbs from your induction veggies?
