  • Mashed Potatoes.. gah

My employer provides a free home cooked meal for all of us employees everyday. It's wonderful... except when you're on Atkins!
Today we had breaded chicken, mashed potatoes & gravy, corn, and salad.
So, my lunch was lettuce - because I can't trust the dressing... and some chicken in which I peeled off the breading (which left me with basically no chicken).
Mashed potatoes are one of my fav's to eat... it was so hard to pass up... I could smell the gravy filling the air... I kept imagining what they would feel like on my tongue... but I just kept pounding away at the lettuce.

I'm starving right now, and I have nothing til I get home (unprepared as usual).
But I did it. I avoided the taters. Just had to share my moment w/everyone.

We have potluck Wednesday at the office. Luckily we have alot of low carbers, so there's always a good food selection.

Use this as a learning experience. Always be sure to bring something that you can eat with you. That way you won't be starving the rest of the afternoon.

Well done in avoiding those mashed potatoes.

We often have mashed celeriac (celery root) with lashings of butter - or you could do the same with turnips or cauliflower.

There is at least one recipe in the Recipes database (link at the top of the screen) for cauliflower potatoes.
Here is one the author says tastes like baked potatoes :

Actually I would beg to differ here if camera has mentioned to her boss that she is on Atkins!!!

If this is happening every day couldnt her boss supply something more Atkins-friendly as well as the mashed potato and breaded chicken?

After all if camera had other special medical dietary needs or religious eating rules I am sure her boss would go out of his/her way to make sure there was no discrimination going on!!

The meals provided are perks of the job which camera can't avail herself of at present so she is being discriminated against here!!

If you haven't told your boss what you can eat and not eat then please ignore what I have said about your boss being in the wrong.

Why not just tell him/her that you are unable to eat what is provided - even say you are a celiac or diabetic and are on a special diet ordered by the doctor if you dont want to mention the 'A' word or let people know you are trying to change your woe for better health and a slimmer you

Either tell your boss if you haven't like suggested. Otherwise, bring something you can have on days like this when they are eating foods you can't. Bring a bottle of salad dressing so you can atleast eat the salad.

                  Re: Mashed Potatoes.. gah

Oh there's no issue regarding me being on Atkins... the cook is well aware, and is sometimes offended when I don't eat her food but I know in the longrun she understands.
I have every capability of leaving the premises for lunch and going out to eat, but I just choose not to because 1) I only get 30 minutes - by the time I get anywhere, I have to turn around and come back; 2) It saves money for me not to have to buy a lunch. That said, it's a struggle at lunch, trying to avoid all the high carb foods, but then again, there's always lettuce and shredded cheese to make somewhat of a salad.

Honestly, even if I had brought my own 3 course Atkins-approved meal, I'd have struggled looking at the mashed potatoes. I can stuff my face til I'm about to explode and I'll STILL lust after potatoes if I see them, lol.

It was just a moment I was proud of - I couldn't believe I was able to say no to them.

I see how it is Camera.
But cant the cook add something you COULD eat? Not too hard to pop a chicken breast under the grill or make you an omelette or some eggs and bacon I would have thought!
Many cooks/chefs are happy to cater for 'special dietary requirements' nowadays if you explain what you can eat in advance and ask nicely.

She easily could, she's just not allowed (owner's kinda... well... odd)... I guess it's so they can be cost effective - basically I have to look at it like... if I don't like what they give me, I can get it somewhere else (leave for lunch or bring my own in).
No big deal though... I'm thankful there's lettuce (and other various salad toppings) everyday. Not many work places offer that.
