  • Atkins friendly jerky?

    I've been to 3 different stores now looking for beef, turkey, or tuna jerkey but have YET to find anything without sugar.

    This is almost the PERFECT atkins snack since its allowed on our diet and you can keep it in your backpack, purse, etc.

    Why won't anyone make sugar-free jerkey?!

    I wonder if there's a place online I can buy some.. I guess I'll try to find one

    I haven't seen any either. Jerky is REALLY easy to make though. Ask you butcher to cut some LEAN beef really thin for you. Round Steak is good for this. Marinate the beef overnight in soy sauce and whatever spices you want (garlic powder, cayanne etc). Then, put the beef in a dehydrator until it is dry, but not brittle. The time will vary depending an the amount of meat and the humidity in the air. If you do not have a dehydrator, this can be done in the oven set on low or warm. Clean one of the oven racks well, and then place the strips on the rack and place in the middle of the oven with the door propped open just a crack (stick a butter knife or something in the door to keep it from closing all the way). Put a backing sheet on the rack below to catch any drippings. This is not a terribly energy efficient thing to do, so make a bunch.

    Unlike store bought jerky with nitrates in it, your home made jerky is perishable. Keep it in ziplocks in the fridge, or freezer if you make a bunch. Lean beef will stay very good in the fridge for several weeks.

    Dehydrators are not very expensive, and if you think you will use it often, they are good investments. When I have lots of fresh tomatoes I slice them really thin, and dry them completely and grind them into a fine powder. To this powder you add your favorite spices and you have instant sauce! Great for backpacking!

      I posted a jerky recipe over in food and cooking chat. Keep in mind the marinade is just a marinade, it doesn't stay on the beef, some soaks in, but not alot.
