    I've been looking for something low cost, portable and easy to make for breakfast for a while now.

    I think I've found it ....

    Egg salad (with atkins friendly ingredients... no macaroni).

    You boil 12-24 eggs late at night or on the weekennd when you have time.

    Then right before work you peel them, throw them into a portable container, add mayo.. add turkey or maybe onions or mushrooms, and maybe some salt, pepper, mustard, etc.
    Done.

    Took me 2 minutes to make breakfast this morning. Then I went to the gym and ate afterwards.

    Total cost was about $1.50 .. total time.. about 2 minutes...

    The cool thing is that I can have more if I'm extra hungry. I can also vary the ingredients if I get bored.

    Next time Im going to add some fresh cilantro.....

    Devilled eggs are a great breakfast too!

      Yeah.. but I've kind of been burnt out on deviled eggs.. plus they're not as portable.

      I'm going to also try to make flax muffins. We'll see...

        Ahh but they are portable. If you cut the eggs into halves, after filling them stick the halves back together. Then wrap in plastic wrap.

        Be careful with the flax muffins because there IS a flax limit.

        In DANDR2002, Chapter 8, Dr. A. wrote that one tablespoon of flaxmeal or psyllium husk or coarse wheat bran is okay to use as a daily fiber supplement. Induction Rule 12 states: “If you are constipated, mix a tablespoon or more of psyllium husks in a cup or more of water and drink daily. Or mix ground flaxseed into a shake or sprinkle wheat bran on a salad or vegetables.” He clarifies the constipation usage in Chapter 23 “For constipation : My preference is psyllium husks. Start with one tablespoon in a large glass of water and increase or decrease the dose until the desired result occurs. Or sprinkle one or two tablespoons of oat bran or wheat bran (if you're not allergic to wheat) over your vegetables or salad. Increased exercise and increased water consumption also help relieve constipation.”

        If your flax muffin recipe uses more than 1 tablespoon per serving then you're flax usage shifts into the flax limits for OWL, because flax is a seed and can be used as a food source during the nut/seed rung of OWL.

          I think eggs are the perfect Atkins food. I'm boring, but I bring two hardboiled eggs to work with me for breakfast pretty much every day. I just never get sick of 'em!

            I think moochiecat is the one who mentioned she doesn't even make deviled eggs fully...just takes boiled eggs and smashes them real good and adds various ingredients
