  • what's for dinner tonight?

Ok, getting low on ideas of dinners to make, looking for something different, so I thought I'd ask what you all are having and maybe I can steal yours!! So far tonight the plan for my family is ribeye steaks on the grill with horshradish and au jou, fresh grean beans, and some kind of rice for dh and kids.

Something with chicken, broccoli, and the cheese sauce from my atkins cookbook?

I had a 'gyros-salad' with a load of homemade garlic sauce, so tomorrow the doctor that will give me a medical will probably draw pure garlic instead of blood, hehehehe <----bit of an evil giggle
the salad was made out of radicchio, lettuce, onion, green squash and mache, the sauce of a few cloves of garlic, mixed into mayonaise, a dash of cream and some water to make it thinner

Oh, I love new ideas. Good idea for a thread, because it is so easy for anyone on any program to get into a mini-rut!

For tonight, I am grilling seasoned filets & Caesar salad. Tomorrow, it's my Sweet Pork Ribs, and Wednesday, seasoned grilled chicken, marinating in Caesar dressing, pepper, and other seasoning. Even my husband loves it - and as choosy as he is, that's a blessing!

If I'm using the conventional oven for a particular entrée, I'll zip it up inside a Ziploc bag inside its casserole dish for 2 days of marinating, so all I have to do is transfer it over, top it with foil if necessary, & toss it in the oven. I'm a no-nonsense girl, so convenience means everything!

Sheila.. you just put the chicken in Cesar salad dressing? I have used Italian before, but that sounds interesting...

We are having marinated steaks (oil, vinegar, soy, garlic and Wooster and loads of CRP)... grilled, with zuccini, broccoli and fettucini noodles for the kids.

Yes, I just bag-marinate it. You'll never believe where I got the idea: you know the actress, Catherine Hicks, who plays the mother on Seventh Heaven? Well, I read an interview on her a few years back and she mentioned that she always marinates her boneless chicken breasts in salad dressing. I thought, "How different!" but I tried it and loved it. It makes the chicken so juicy! So, now I do it all the time. Here's a photo of her in case you can't place a face with the name ...

              Re: what's for dinner tonight?

Tonight I had grilled chicken with a jalapeño mustard sauce (of my own making). I also had tomato slices with herb garlic feta cheese and a bit of Italian dressing drizzled over the top. It was very good.

Chicken curry! Do a search at atkins site and you'll find my favorite dish, atkins or not. I love it to death. I could eat it all day long and night.

                  Hi Sheila,

Yum, the sweet pork ribs sounds like a delectable induction friendly dish! This is kind of embarrassing to admit, but this 30 year old (incredibly spoiled) asian male is relatively new to this cooking thing . I’m proud to say that I know where to find my cutlery, implements, and pans. You see, I've started taking things in my own hands and cook more for myself, since my skinny girlfriend disapproves of my Atkins lifestyle.

Which brings me to my question... How do I prepare the sweet pork ribs Sheila? I'm assuming that I will have to marinate the ribs for a couple of hours before putting in the oven, providing I figure out how to prepare the sauce.

I really do like this thread, even lazy ole me have already picked up a couple of tasty alternatives to weiners, boiled eggs, and salad.

Parmesan chicken with broccoli tonight! I might buy another spaghetti squash and make a side dish with that since I figured out how to make the strands tender.
