Give us an idea of your cooking skills level that way it will be easier for us to give you appropriate recipes.

In the meantime, here are two super easy meals.

    Cobb Salad
    1 hard boiled egg, sliced
3-4 ounces cooked chicken or turkey
    2 cups salad greens
    4 or 5 black olives
1/2 ounce crumbled blue cheese or shredded cheddar
    Optional: tomato slices, onion slices
Dressing: blue cheese or a vinaigrette

Mix the ingredients together. Toss with dressing.

    Salad Nicoise
3 - 4 ounces tuna (either canned or a grilled piece of it)
    1 cup lettuce
    1/2 cup cooked green beans
    1/4 cup radishes
    4 or 5 black olives
Dressing: your choice, but a vinaigrette is traditional

Mix all of the above together. Toss with dressing

You can make up a batch of chicken or hamburger or whatever meat you want and then put into individual bags in the freezer and pull out as needed.

This week I have been pulling out stuffed peppers for supper. http://users3.ev1.net/~fontlady/index.html

I also use a prefab hamburger patty (make sure there is no fillers...100% beef) and add ceyanne pepper and then cut it up and add it to my salad for a lazy taco salad.

My favorite right now is chile rellno's.

1 lb of white breast chicken meat
6 pablano peppers (roast and peel skin)
              1 bunch of greeen onion
              6 oz of cheddar cheese

Cook meat however ya want. Cut up into little chunks and dice up green onion and mix together. Add cheese and then stuff peppers. Pop in the oven at 400 degrees til the cheese is all bubbly! YUMMY!

Re: Easy to cook Induction meals?

Have you got a slow cooker or crockpot? If so just throw browned meat with a little seasoned water and a few slices of onion/celery/peppers into it and leave it for the day.
It will be sitting there waiting for you to quickly cook some veggies to go with it when you are ready to eat.
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!

Re: Easy to cook Induction meals?

Here is one I just found on the board by somebody who was a member. Funny, she only posted one time and never came back but she left the best recipe:

Heat oven to 350. Spray a muffin pan with non stick spray. Then take 6 strips of bacon and nuke them for 1-2 min. Take them out of the microwave and wrap around insides of the muffin tin. Take pork sausage, out of its casing or use the kind that comes packaged in a roll, and take a small amount and pat it into the bottom of the muffin tin. Make sure that it is not a big hunk of meat but fairly thin. Crack eggs on top of the sausage patty, inside the bacon. Bake for 30 minutes.

You can do lots and keep them in the fridge or freezer. I can't eat pork, so today I am trying this with ground turkey and turkey bacon.

If you need more ideas on induction recipes, go to the forum page and click on the one that says Low Carb Menus and read the induction "stickys". Lots of great menu ideas and recipes posted in there!

Re: Easy to cook Induction meals?

We really love taco salad, I'll mix up several batches of the seasoning at a time to save time.

                      Taco Salad

2 tsp instant minced onion (consider the carbs dont forget)
                      1 tsp salt
                      1 tsp chili powder
1/2 tsp corn starch (carbs....usually i leave this out)
1/2 tsp crushed dried red pepper
                      1/4 tsp dried oregano
                      1/2 tsp ground cumin
                      1/2 tsp instant minced garlic

Brown 1-2 pds ground beef, stir in spices above, let cook about 10 minutes.

Line dinner plate with chopped romain, top with ground beef mixture. Top with shredded mexican blend cheese, sour cream (just a bit), black olives, chopped onion (just a bit), chopped cilantro and a few dashes of the new Roasted Chipotle Tobasco sauce.

Now if you like things quite a bit spicier, like we do, add a chopped chipotle pepper in adobo sauce.

Some weeks we have this 3 or 4 times, reheats great.
