Some of you may remember me. I was (well..still am) the trucker that posted here a few months ago asking for advice in having a clean induction while on the road. My major obstacle: I'm home only 1 day a week and living out of my truck the rest of the week.
After a few tries, I kept failing and throwing in the towel. But I have now finally did a good length induction. I started out around 304 lbs and as of this morning I weighed 282. I never thought I could do it. I almost failed on this time too but thank goodness for keotosis test strips. Last month when I was about 1.5 weeks into induction, I had a super bad day and was near a McDonalds. I thought screw this, I'm going to have a Big Mac meal deal because I'm probably not in ketosis anyway. I decided to use a test strip before going in just in case... and it was as dark as dark could be and a great big grin came across my face and I havent looked back since. Instead of McDonalds, I got a whole hot roasted chicken from the grocery store, ate part of that and save the rest in ziplock baggies in my electric truck cooler.
On my next time at home, I prepared even more for the coming week on the road. For dinner at home I cooked a roast with onion and beef consumme in the crock pot and store a couple of portions in ziplock bags. For lunch at home, I make taco meat with my homemade taco seasoning as the store bought kind is actually pretty high in carbs. I pack that meat in ziplocks bags for a taco salad with a small amout of salsa (2carbs), a bag of shredded cheese and sour cream. For the lettuce, I buy leaf lettuce, save the best 5 or 6 leaves whole for sandwich wraps, put those in 1 gallon ziplocks and chop up the rest for salads along with green onions and that goes into another 1 galllon ziplock. I cut up celerey,a cucumber and a broccoli head and those go into ziplock bags for the week. For dressings and other misc stuff I have a bottle of ranch, a bottle of Walden Farms Thousand Island (the only 0 carb 1000 island dressing), a jar of salsa, a small jar of coarse ground horseradish for use on brats/hot dogs that I can pick up hot/cooked in truck stop convience stores. Also I boil 6-8 eggs at home(depending how many I have left over from previous week) and take those for a quick mid morning snack.
One thing is I dont like is eating when I first wake up so instead of just skipping, I do drink an Atkins shake when I first wake up. I've been able to drastically cut my soda drinking to 2-3 cans (Pepsi One w/ splenda) in the morning. thats a reduction from soda being my only liquid intake most of the time. I now drink regular bottle water and Klarbrunn sparkling water (carbonated water with no carb fruit flavorings).
My family and friends have even asked me if I'm losing weight. My buddah belly is actually shrinking and I no longer look like a guy carrying twins. I even had to add a couple of holes to my belt (on the smaller end). My face was looking pretty puffy 2 months ago and thats reversing as well. An interesting thing I notice is my hair isnt growing as fast.
Well sorry to go on and on for so much but I'm really happy and plus I dont get access to the internet very much since I'm always on the road and in a truck.
