  • Recipe Modification - Need Help

    I want to try this recipe, but I don't want to use a bake mix. I assume that's like a binder of some sort. Anyone have a suggestion for a substitute that is on induction? If it's for binding, can I just use egg?

    How about crushed pork rinds??? I know that some folks use them in meatloaf. Or egg? Here's another recipe for meatballs from Linda's Low Carb recipes...

    The sauce looks kind of weird, but the meatball recipe looks good. If you haven't browsed this website before, you might want to. It's got a ton of great recipes, and she marks the induction-acceptable ones with asterisks.

      You definitely don't want to use their bake mix... I've never tasted anything so rank in my life (including that moldy bread I ate by accident). I'm not sure exactly what difference it would make (baking times, texture, etc) but you can use eggs and wheat germ and/or flax instead.

      Essentially meatballs are meatloaf babies. I've done the meatloaf with wheat germ and flax instead of oatmeal or crackers and it turned out fine. Strictly speaking though, you might have problems with amounts. Flax is 1 tablespoon/day. Not sure on wheat germ (that was about the only time I used it).

      Personally, during Induction, I say skip anything you're not sure about, but I'm hoping someone will come along who can shed some light on daily limits of wheat germ.

          I don't bother with that...the meatballs stay together all by themselves, there's no need for adding anything other than flavourings. Breadcrumbs/crushed crackers/bake mixes....they're all pretty much fillers anyway, to bulk out the meat and stretch it...they aren't really necessary.

            I have been craving meatballs and was going to just go buy ready made ones becuase of how bad I felt today. I'mlooking at them and sure enough they all have sugar in them and flour and that fun stuff...guess I'llmake my own .

            Oh and one other thing that I am really craving and can't have is kielbasa..... wahhhh I asked at the place i buy it how they make it,they smoke their own, and they use sugar in their recipe.... WAHHHH

              I make a bunch of meatballs at one time and freeze them either cooked or raw. That way, whenever I want them, I have them ready to go.
