  • MISS THOSE CHICKEN WRAPS ? BEEF WRAPS? perfeecctt *INDUCTION FRIENDLY* snack idea.

I've learnt to be sooo creative on this diet. Yesterday I was shopping and I got a lot of lettuce, and other salad items. I looked at the tortilla wraps and they looked SOOO good.

    So....this is what I came up w/

    Ingredients:
    •Lettuce leaf(s)
    •Tomato*-sliced
    •Onion* -
•Any filling ( chicken/ beef / turkey Salami or bologna. Even roasted beef, chicekn breast minced, shrimp, go crazy)
•Any cheese that you would usually include in a wrap/ sandwich
    •Mayo (if desired)
    •Lemon Juice
    •Oregano (optional)
    •chopped cilantro

    Directions:
1.Take the lettuce leaf and spread the mayo on. Cream cheese can also be used.

    2. Sprinkle some lemon juice on the tomato, onion, oregano, cilantro, and cheese.

    3. Lay the chicken/ meat/ beef , whatever, on your lettuce leaf.

4.Arrange the rest of the ingredients on top of the filling.

5.Wrap it up and seal it with two toothpicks on either sides

    Voila!

You can cut it up into pieces, make a ton at one time and store it away, so you can have it as snacks.

Make sure you count your carbs:

Lunch meats such as beef bologna have about 0.7 carbs
Romaine Lettuce (a cup) contains about 0.7 carbs
A small tomato contains about 3.2 carbs
    An onion contains 7.5 carbs

I'm sure you won't be using a whole cup of romaine lettuce, or a whole onion, so count accordingly.

    Enjoy.

Yes these are good. I make "faux-jitas" using grilled chicken breast, grilled green or red peppers, green onions, a dab of tomato salsa and guacamole (or slices of avocado) and roll them in a large lettuce leaf. I have fauxjitas for dinner once a week.

But don't limit yourself to lettuce leaves. Blanched cabbage leaves and blanched Swiss chard leaves are good substitutes too.

I never would have thought of doing that, but i have always loved the lettuce wraps at chilis, so those would be perfect for me!

Trader Joe's carries packages of large lettuce leaves that are specifically for wraps. You can also use the deli meat for the wrap....
