  • Vegetables or chewy water?

    I am seeing several posters who are choosing only lettuce as their 3 cups per day - either because they say they 'don't like vegetables' or that it is easier and quicker to grab a prepacked bag of iceberg or romaine fromt he shelf of the supermarket.

    So I wanted to remind you all that it is not just lettuce in the 2-3 cups list!

    Try to think of them as 'salad vegetables' rather than just 'lettuce' to remind yourself that there is lots more choice than lettuce.
    Salad Vegetables
    You can have two to three cups per day of:
    alfalfa sprouts, daikon, mushrooms, arugula, endive, parsley, bok choy, escarole, peppers, celery, fennel, radicchio, chicory, jicama, radishes, chives, lettuce, romaine lettuce, cucumber, mâche, sorrel, spinach

    These salad vegetables are high in phytonutrients and provide a good source of fibre

    Other Vegetables
    You can have one cup per day of these veggies if your salad vegetables do not exceed two cups. These are slightly higher in carbohydrate content than the salad vegetables:
    artichoke, celery root, pumpkin, artichoke hearts, rhubarb, asparagus, chard, sauerkraut, bamboo shoots, collard greens, scallions, dandelion, snow peas, bean sprouts, dandelion greens, spaghetti squash, beet greens, eggplant, broccoli, hearts of palm, string or wax beans, broccoli rabe, kale, summer squash, brussels sprouts, kohlrabi, tomato, bean sprouts, leeks, turnips, cabbage, okra, water chestnuts, cauliflower, onion, zucchini

    If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.
    Those of you who have memorised the lists or want to check your DANDR will notice I have moved spinach from the one-cup list to the 2-cup list.

    This is because I have seen many people posting the nutritional info on spinach and arguing that spinach was put on the wrong list in DANDR, and that it makes sense to move it to the 2-cup list.

    So everybody - please dont limit yourself to just lettuce, and if you do decide to only eat lettuce, make sure you choose some of the darker coloured ones which are much more nutritious than plain old 'chewy water' iceberg!!

    We are supposed to get at least half of our carbs on induction from our veggies, so if you only have 3 cups of romaine or cos lettuce (according to fitday this is only about 1 carb once you deduct the fibre) you could only have another one carb for that day!!

    So what wil you choose to go with those 3 cups of chewy water?
    1 and a half large eggs (1 carb)?
    1 pack of splenda (1 carb per serving)?
    1 ounce of cheese (1 carb) ?

    Doesnt sound much like Atkins to me!!

      Yep..good post, Elizellen!

      I'm a big fan of encouraging folks to think nutritionally when it comes to selecting vegetables.
      We hear people say from time to time "Atkins is so limiting!" It really isn't; you are only limited by your imagination and there are countless ways to enjoy the veggies available on the List.

        I admit I'm usually doing 2 cups of lettuce and then 1 cup of the other stuff a day. I'm trying to branch out though

          Good post. Those that are having some constipation issues should really look at incorporating that cup from the other veggie list as they tend to have more fibre.

            Yes, try new stuff!! I bought a daikon (white radish) for the first time last week. I am now in love. I'm not sure how nutritious it is since it's so white, but it is just yummy and so refreshing. Spinach salad with dinner last night. So many good things to try... Thanks Elizellen.

              One of the definitions for "salad" is a "mixture". All the veggies on the salad list can be eaten raw. If eating "big chunks" of vegetables is unappealing to you, shred them (as in a coleslaw-like shred) or chop them. The texture will be different and that might be more appealing to the vegetable resistant.

              The other thing is that people tend not to like vegetables because they've never had them prepared properly--usually these vegetables have been overcooked and awful tasting.

                With my first start, I did stick to 2 cups lettuce and 1 cup 'other' veggie...but my lettuce was always the dark greens. (no iceburg!)

                This time around I've been a bit more flexible with my veggies and have mixed it up each day thus far. I have a full bag of spinach in my fridge (I love spinach salad...add an egg and some olives and it's great!) and instead of the regular romaine or other dark greens, this time I chose a 'mixed' bag.

                It contains:
                romaine
                radicchio
                spinach
                lolla rosa
                tango
                red and green oak
                red leaf
                tat-soi
                mizuna
                red and green chard

                It's amazing the variety of lettuce that's available out there! Some of the names I've never even heard of...lol.

                It certainly doesn't have to be romaine and iceburg every day!

                And, I tried Jicama for the first time yesterday...and it's awesome! I highly recommend it!

                  canned pumpkin (unsweetened) (9 carbs minus 5 grams fiber=4grams carb) is really good and high in vitamins. I use 1/2 cup blended with 3 oz cream cheese plus one packet splend heated in microwave. Sprinkled with cinnamon it is like having a dessert--and still leaves 2 1/2 cups of vegetables to go for the day.

                    I have a question regarding vegetables...If I don't have a 'salad', can I have more than one cup of the other veggies? I'd much rather eat broccoli, cauliflower, turnips, brussel sprouts and cabbage than salad veggies.

                    Example: yesterday I had 1/2 cup of broccoli, 1/2 cup of cauliflower (mashed) and a small turnip sliced and deep fried. I'm still on induction. Is this wrong?

                      For the two weeks of induction (or longer if you dont move on to owl after that) we ought to stick to the laid-down quantities, so yes it was 'wrong' if you are trying to do a 'by the book' induction.
                      Now that doesnt mean you will be cursed for ever LOL!

                      Add some of the other 2-cup list to your meals and stick ot one cup in total of the 1-cup list till induciton is over.

                      Then move smartly to the veggie rung of OWL and add 5 net carbs of those yummy 1-cup veggies!

                      I am a big veggie fan so stayed on the veg rung for a while, adding another 5 net carbs several times over the couple of months, till I was 'allowed' as many veggies as I wanted.

                      Dr Atkins expected us to be eating 6-8 cups of veggies once we reached goal and were in maintenance Atkins!
