    Is it okay to eat parks brand sausage although it contains dextrose? If Im not mistaken, anything ending in -ose is a sugar . And also Oscar meyer bacon contains sugar, sodium erythorbate(made from sugar) and sodium nitrate. In the book, it states that nitrates should be avoided. It looks like OM bacon is out . Which other brands of meat are okay to eat? Maybe I should just go to the butcher and have them hack a pig!

    Kroger and Walmart have a sugar free bacon.

    And well actually hold on to your hat all your Atkineers reading this reply. New medical evidence says nitrates are actually good for us. it was always thought that nitrite was an inhert compound in the body and did nothing good but some folk following up on those rumors of it being cancer causing actually discovered that muscle supplies of it during exercise went down and this led to other studies that have shown that during low oxygen periods nitrites actually protect our body muscles and organs from damage like during heart attack and stroke.
    Okay so now you are wondering is 2BIG just spelling this wrong or is she really discussing Nitrites when I ask about nitrates in my bacon? Well in humans those nitrates mix with saliva in the mouth and become nitrites the good for us compound. Can you imagine Dr Atkins joy if he knew about this? Something in many foods added as a preservative that can actually help save our life.

      And yes anything ending in -ose is sugar...so it's a no-no.
      Having said that, if the sugar is at the end of the ingredients list, then it's probably a really tiny amount. Unless you are eating 5 pounds of them a day there shouldn't be a problem.
      Just make sure you aren't eating anything like a honey maple or teriyaki sausage that you just know will hold a lot of -ose!

      Also watch out for wheat crumbs and modified starches in the ingredients. Best if you can go to a local butcher and get something they make themselves, so you know what's in it and that it's got quality ingredients.
