Canned or fresh fish is great!
I like to take canned salmon, mix in an egg and some ground flax seed, salt, pepper, dill, whatever my heart desires - make it into little patties and fry it in some butter and olive oil. These are great hot out of the pan, or cold from the fridge as a snack, dipped in a little sour cream or blue cheese dressing.
You can make meatballs from ground chicken or turkey (egg, spices, maybe a little olive oil to counteract the dryness, roll into small balls and bake on a rack at 350 for 45 mins or so, depending on the size of the balls) and have those hot or cold as well.
I have some....what's it called...hot red pepper sauce (salem olek? something like that!) and if you add a little bit of that to the ground poultry it just brings it alive!
You could Asian the flavours up by adding minced water chestnut, a splash of sesame oil and some five spice powder.
One of my favourite snacks during Induction was to cut up pepperoni(you can use cooked chicken or turkey), celery(or radish...or both) and cheese into small bite sized bits and mix them together in a bowl. It gave me a 'popcorn' type feel to eat a few bits at a time and it was a nice crunchy/creamy mix of things.
All of these require a bit of pre-planning, but they are well worth the effort to have on hand.
The meatballs will also freeze well.
what about seafood? i usually eat a few crab fingers- not imitation but the real stuff.
canned shrimp.
any other seafood or fish
my m-i-l makes a good party snack, basically it is any seafood with a touch of mayo, spices and spring onion served in a slice of lettuce. i have forgotten the name, could be endive- it is quite tasty.
How about just some veggies with cream cheese?? I like stuffing celery with that. Also, I like just having a couple chunks of cheese (within the limits) I've found that pepperjack really satisfies me and the fat makes you feel full. You aren't eating pork, so I guess pepperoni or salami are out of the question, but turkey roll-ups or something are always good!

How about some cheese crisps? Just put some cheddar cheese (or any kind of hard cheese) in a thin layer in a non-stick pan on medium heat. After a few minutes it will become lacy. When it starts getting a light brown, turn it over on the other side for another minute or two. You can then shape it or wait until it hardens and break it into pieces. Delicious!

I eaten this before...it reminds me of Cheez-Its!!! Yum!
I also like egg salad as a treat or meal.
