Is it okay to use half-and-half or does it have to be whipping cream? I tried the ice ceram with the half-and half before I am starting and it seemed to work okay and tasted great.

You are allowed cream, but only 2-3 tablespoons per day on induction. You have to track the carb content too.

I'm confused then, because on page 127 of my DANDR, it says acceptable during induction is cream (heavy OR light); limit to 2-3 tablespoons a day; note carbohydrate content.
What is half and half if not a lighter cream?

You are permitted 3 ounces (6 tablespoons) of heavy cream per day on Induction, as per Dr. Atkins' New Diet Revolution - red copy.

AHA, thank you very much for the clarification, I'm not quite sure what would be considered light cream then (i'm obviously not a cream expert, lol). Sorry if I confused you. I was wondering, is the red copy the 2002 DANDR? I have a white copy, and I've assumed it's the 2002 version that is used here, but I think the red one is different than mine if it says a different amount of cream.. which one is the one we use here?

Cream is listed with 2 different amounts in the Induction acceptable Foods List. It's listed under "Beverages" with a 2-3 tablespoon amount and it's listed under "Special Category Foods" with a 3 fluid ounces amount. The Special Category foods has a warning that says these foods might cause weight loss problems and might need to be avoided during the 2 week Induction. Soooo, if you use 3 ounces of cream daily and you aren't losing weight/inches, you may need to cut back on the cream. The 2-3 tablespoon amount is most likely the "safe limit" the majority of us can take without weight loss problems.
By the way, cream has carbs and those carbs must be counted towards your daily carb count.
The different creams....
Cream is not 100% fat. The different creams (heavy AKA heavy whipping cream, light AKA light whipping cream AKA whipping cream, AKA table cream AKA coffee cream) have different fat % content.

I need to ask you if you've read Dr. Atkins New Diet Revolution (version 2002, DANDR for short) as the ladies have talked about in the previous posts?
If you have, great! Take some time to re-read the chapter on Induction and understand the 'why' behind the diet: to keep your blood sugars on an even keel.
If you haven't read it, you need to get your hands on a copy ASAP so you know more about what you are doing and how to do it correctly.
Induction is a time where you cleanse yourself of the things that are not good for you (sugar, starches, caffiene) and you begin building the foundation for a new better way of eating for life.
Facing our sugar monster and banishing him is something that most of us here have had to do. Substituting low carb sweets for the high carb sweets we are used to is not really learning anything, is it? It just shifts our sweets obsession from one thing to another.
What I did was show my body that if it was hungry, I would feed it...but I would be feeding it something of MY choosing..not of my body's choosing.
If I wanted ice cream, I'd have a spoon of cream cheese sprinkled with splenda...OR better yet, I'd have a protein/fat snack of meat and cheese, or a boiled egg.
I've killed my sugar monster and I tell ya, it's the most liberating thing I've ever done!! I can have sweet legal things now, but they are just no big deal, and one or two mouthfuls is all I need...I don't feel compelled to eat the whole shebang.
So, educate yourself as much by reading DANDR, by all means ask questions, and think about the role food (particularly sweet things) play in your life and whether you really want to have them play as big a role as they are playing, or if you want to be calling the shots.
Just some (legal) food for thought.
