I saute fresh garlic in olive oil until softened. Then I add a handful of chopped fresh parsley and saute a bit longer. Throw in a can of plum tomatoes and break em up somwhat. Add salt and pepper to taste, fresh or dried basil and maybe a wee bit of oregano. It's a very flavourful, light sauce. Want something a little heavier...add a bit of cream. Sometimes I might saute a bit of chopped onion with the garlic but usually I don't. Just figure out the carbs for the entire thing, divide by the number of servings. I like to have it on hand for my spaghetti squash. Throw in some cooked shrimp and some freshly grated parmasian cheese...yum.

Oh, that sounds great!! I just put it into fitday.com and using 1 cup canned tomatos, garlic and cream it comes out to 10 net carbs. Thanks so much, I can't wait to try it!

OMG!!! This sauce is great!! I put lowcarb meatballs in an oven safe dish, scooped the sauce over them than layered mozzerella cheese on top and baked it till it bubbled. It was AWESOME!! I added the cream in the sauce. It was sooooo yummy!! Thanks!!

I use Contadina, as it is the lowest-carbohydrate tomato sauce I have found.
