  • is ricotta ok on induction?

    i know cottage cheese isn't ok and neither are "fresh" cheeses. however, "fresh cheese" really means nothing to me. i'd like to make a mock lasagna of sorts with zucchini as the "noodles" and with riccota cheese in the filling (but not enough to cheat and/or stall).

    I'm not sure, but I don't think it is allowed. Here's a list:

    You can consume three to four ounces daily of the following full-fat, firm, soft and semisoft aged cheeses*, including:

    cheddar
    cow, sheep and goat cheese
    cream cheese
    Gouda
    mozzarella
    Roquefort and other blue cheeses
    Swiss
    Rick
    38 - Male - Houston
    Restarting 1/4/10

    250/245/200

    If you continue to do as you've always done, you will continue to get what you've always got.

      Yes, fluffyman is right - ricotta comes back in the Dairy rung of OWL along with cottage cheese.

      You can use cream cheese or a hard cheese instead until then.
