  • Artichoke count

    I am in my second round of two week induction. How do I count a steamed artichoke if I decide to have it? Would one steamed artichoke count as a cup of limited vegetables--I am trying to get a mental picture of the amount that actually comes off of the leaves. Any suggestions?

    Artichokes are on the "other veggie" list, so it's limited to 1 cup. The carb count varies on how the artichoke is prepared. For example a whole artichoke has about 6-7 net carbs. So you'll need to look up the carb count in a carb counter, like the USDA Nutrient Data Base or fitday.com.

    As for a whole artichoke, I tend to count one whole artichoke as the equivalent of one cup. For me, eating a whole artichoke is time consuming and after I finish eating it, I don't have any room for anything else.

      Thanks Megs! Just wanted to be sure. My counter only has hearts--not leaves, so this will help a lot!

        Use the USDA website. They usually offer several "preparation" options for the various foods.
