Are you allowed to exceed the three cup rule (2 cups salad/1 cup cooked)? I thought this was the max allowed?

if you are doing induction then thast is it for this place as we follow DANDR 2002. Induction is about learning control of your eating. 3 cups of veggies is 6 portions according to the stander serving size for most veggies in the USDA listings. Over eating any part of your Atkins will get you into troubel later on. You can add more veggies the first week of OWL which is only 14 days away from folk on Day one of INduction.
As Dr Atkins says yes it is strick but you got the rest of your life to add abck the other foods. Take this time to get control of yourself and mastery of your foods.

Just a note that you can eat your vegetables prepared how you like, you don't have to stick with 2 cups raw salad and 1 cup cooked veggie. The first rung of OWL is to add in 5 carbs more of veggies so when you are done Induction you might want to consider moving up and staying there for a while.

Other Vegetables
You can have one cup per day of these veggies if salad does not exceed two cups. The following vegetables are slightly higher in carbohydrate content than the salad vegetables:
artichoke
celery root
pumpkin
artichoke hearts
rhubarb
asparagus
chard
sauerkraut
bamboo shoots
collard greens
scallions
dandelion
snow peas
bean sprouts
dandelion greens
spaghetti squash
beet greens
eggplant
spinach
broccoli
hearts of palm
string or wax beans
broccoli rabe
kale
summer squash
brussels
kohlrabi
tomato
bean sprouts
leeks
turnips
cabbage
okra
water chestnuts
cauliflower
onion
zucchini
If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.

Yes and no. Jicama is on the "salad" list, but it contains 5 net carbs per 1 cup. Spinach is on the "other" list, but it contains less than 5 net carbs per 1 cup raw. So there are exceptions on these lists.Originally posted by Eleonoregot it; I thought it was becuae of the carbs these veggies had.

Just remember, Induction is a minimum of 2 weeks. Once the two weeks are over you can move to OWL Phase and add 5 net carbs of the Induction veggies to your daily vegetable intake. By the way, if you choose to "extend" Induction beyond the minimum 2 weeks, you still have to follow the Induction Rules and Induction Acceptable Food List.
