  • artichokes?

    are artichokes acceptable?? i entered it into fit day and it came back with 13 CARBS!!! is this correct?

    What was the fiber count? Don't forget on fitday, you have to take the fiber out of the total carbs to get the net carbs. I do believe that they are allowed, but...
    I have wanted to try them, but have no idea how to prepare them.
    How are you doing?? I was wondering about you just the other day, I have missed your posts. So glad to see you!!!
    What would we do without it?

      thanks for the kind reply!! woo hoo! i'll be sure to keep in better touch and post more now that i know that i am noticed. cool!

      well, you can steam them on a stovetop or step them in a ziploc in the microwave. then eat with butter and mayo. ... SO Great.

      thanks for the reminder about fitday and the fiber count, i completely forgot.

      i'm back on the atkins induction wagon full speed. i got off for about a week, wanted to see if going just low-cal might work just as well. and boooooooooooy did i learn my lesson. ick.

        One medium artichoke has 13.4 grams of carbohydrates, 7 of them fiber. (Not bad!) I use these (jarred) for homemade spinach-artichoke dips, using celery sticks, or cucumber, zucchini or squash slices as makeshift "chips." Yum!

          I love artichokes. I like artichoke hearts in my salad. I'll deepfry them after 'breading' them with a mixture of half ground pork rinds and half parmesan cheese. Sounds disgusting but tastes delicious. I'll use the same 'breading' for deepfried zucchini fingers too. Such a treat!

            Oh yum, they are in "season " now also. Hummmm, DSIL and DD are coming for dinner, I wonder how he feels about them.

              I know this isn't the recipe section, but I am curious about how to cook artichokes as well. Say you steam them, what parts get discarded and what parts do you eat? How do you prepare them for cooking? Do you toss the outer leaves? I was thinking about steaming them and doing some sort of spinich dip thing.

                  No layla, sorry!! I don't think you can eat 9 grain bread until the whole grains rung, which is right around maintenace, I think. I am sure someone will know when you can have it for sure.

                      Ok. I have to post here because I'm told I make some of the best artichokes my guests have ever had. Use a big pot about 3/4 full of water. Salt the water liberally. Add 1 cup of red wine vinegar. Take one clove of garlic and break it - hitting it in a plastic bag will break it up easily so you don't spend all night peeling it. Shove some of the pieces into the artichoke and add the restv to the pot. Place the artichoke into the water. Place the lid on top and simmer for 45 minutes. Drain and serve with hot butter. I serve the artichoke as a first course and then boiled shrimp. This whole meal is elegant, filling and atkins friendly.

                        I once got an artichoke at the Cheesecake Factory a few weeks back. It was totally bizare--highly fiberous, extremely tough, I can't even describe it, I felt almost like I was eating bristles from a paint brush that were going to clean out my insides. Have they just done it wrong or is the artichoke an acquired taste?
