      Pork rinds make me sick to my stomach. And I could always taste them in whatever recipe I was using them in. Yuck.

          I used the French Toast recipe and made pancakes. Then I served them to my guests and didn't tell them anything. And NO ONE GUESSED! I use Pork Rinds for lots of things! I use them to make Chicken Fried Steak. I use them to coat chicken and bake in the oven. No one ever believes me - and our au pair HATES them but she never knows when I add them to stuff.

          Having said that, French Toast and pancakes usually mean sugar free syrup. So remember that you only get 3 sweeteners a day and it is quite easy to get 3 teaspoons of Syrup. I save this dish for special weekend breakfasts. (make extra pancakes, put in freezer, and pop in toaster when you want some more)

            I have eaten the pork skins and liked them for dipping, I didn't have a problem with them stalling me... one night I wanted to make meat loaf and in the recipe I had asked for Bread crumbs so in place of the crumbs, I crumbled the port skins and put them in the meat loaf and it was very good... you become quite inventive... you just have to taste them your self to make your decision... have fun

              I've tried a lot of different brands and they're all too salty except for UTZ. They're pretty decent. Don't eat them a lot. My husband and I like to take them on long trips as a snack.

                  I went crazy on porkrinds the first 2-3 days of induction and havne't touched them since. I liked the ones coated with chili before I started atkins

                    I love the french toast recipe. I also use them for breading and break them up a bit and put them in taco salad for a little crunch.

                        I can't find the link, but here's the recipe...

                        1/2 of a 3oz bag of unflavored pork rinds
                        2 eggs
                        1/4c heavy cream
                        3 pkts splenda (I use 1)
                        1/2 teaspoon cinnamon
                        1/2 teaspoon egg nog extract or vanilla (optional)

                        Crumble pork rinds until they resemble bread crumbs. (I used my food processor) Set aside.
                        Beat eggs well and then mix with the remaining ingredients and beat again. Add crushed pork rinds to the egg/cream mixture and allow to sit for 5 min. Mixture will thicken to a "gloppy" phase.
                        Meanwhile, heat skillet or griddle with butter or oil. and when hot, fry pancake style until golden brown on both sides. Serve with LC syrup.

                            What do you think of pork loin chops with the fat and rind - is that type of rind (grilled) really salty too? I've been having 2 of those chops for many, many nights - but not every night!

                              Personally, I like to mix pork rinds with a little splenda and cinnamon in a sandwich bag. Kind of like cinnamon chips from Taco Bueno with a funky aftertaste.
