In the 2002 book on page 123 it says you can have 250g salad or 170g salad plus 80g other vegetables, then on page 125 & 126 it says you can have 230 - 340g salad or you can have 140g - 200g other vegetables if salad doesnt exceed 230g. So which one is it? I'm very confused!

I'm guessing you got the book that some UK editor thought he was helping you with by changing American ounces to grams but didn't know those were American volume ounces not weight ounces.
Dr Atkins wrote the book to say during induction we can have 2 or 3 cups of the veggies on the salad veggies with one cup of the other veggies IF the salad veggies does not exceed 2 cups.
if you need it in grams you can use the USDA site to see what those veggies would weigh for those amounts. http://www.nal.usda.gov/fnic/foodcomp/search/ like one cup of grean leaf lettuce is 47 grams.
if you just want to convert to ml you can use this site http://curezone.com/conversions.asp and use the fluid ounces 1 cup is 8 fluid ounces or 236.588 ml so you can have 237 ml of the other vegeis if your salad veggies are only 454 ml. you can have 711 ml of salad veggies and no other veggies.by the book atkinseer

Yes, 2big is right this is an incorrect adjustment by a UK editor who (like most of us over here before Atkins) had never heard of measuring solid things like veggies by using a liquid measuring device.
I assume he/she converted the cups into ounces without realising that should be using US liquid ounces not weight ounces!! Then converted the weight ounces into grams to make more sense to Europeans.
A comedy of errors I am afraid.
so as suggested you can use the USDA numbers or get yourself some US measuring cups - even Asda and Tescos sell them nowadays - and use them instead for chopped up veggies.
For things like broccolli and turnips which dont easily fit into the cups you can use a large measuring jug instead. Pour water into the jug up to the 237 mls level then drop your veggies in that till the water level covers the veggies and reaches the 474 mls level. You then know you have one cup of water plus one cup of veggies.
Then drain the veggies and measure what they weigh - that weight is how much broccolli is the equivalent of one cupsworth.
Do the same for other veggies you use and make a list to use in the future.
It takes a while to do but once you have your list you can just weigh them.
What a pity Dr Atkins wasnt a trained chef as I think even in USA they do use scales to weigh solid foods in catering colleges!!Wondering how to get 'most' of your net carbs from your induction veggies?

the USDA site will tell you how much in grams one cup of a veggie is so you don't have to even learn it if you don't want to.
