      Re: What's for Dinner Tonight?

      Deborah,

Normally we grill them, but tonight we were out of gas

I put them in a pan, seasoned with salt, lemon pepper, garlic powder and baked them 375 degrees in the oven. They were VERY good. I like to eat them with horseradish and mayo mixed together as a dip. The asparagus, you put in a pan and drizzle olive oil over them and salt and pepper to taste and cook them at the same time as the pork (though not as long) and they are absolutely delicious that way. We never steam asparagus anymore because roasting them with olive oil is so much better.

Oh, and I'll tell you what we had last night for dinner...it's induction friendly too...and delicious!

        Diced chicken breast meat
put some olive oil and butter in a pan just enough to coat the pan/chicken.
Sautee the chicken, add broccoli and cover until the broccoli and chicken are cooked.
Sprinkle parmesan cheese and add some heavy whipping cream to make an "alfredo" sauce. The parmesan and cream will thicken pretty quickly, so don't leave it over the heat very long.

        Sorry, I don't always measure.

        This was Sooooooooooooooooooooo good.

Well I got one of my packaged "garlic and herb" Tuna pouches and sauteed it on the stove with onions, garlic powder and Tonys cajun seasoning, shredded mozarella and 2 sliced graped tomatoes, then when it was all mixed together and melted and hot goodness, i mixed with w/ mayo and served it on a bed of lettuce. Took about 5 minutes and oh so good.

Well I'm trying to find my own "whooshability" factor - so tonite we had beef tenderloin on the grill - seasoned with a little bit of steak seasoning and 1 tsp of worchester sauce - YUMMY- and then I made a special "whooshie" sauce using creamcheese, horseradish, a little worchester sauce and light mayo - and then used a little to dip my steak in, a little as cocktail sauce for my chilled shrimp - and the rest for deviled eggs - I added it to the hard boiled yolks along with about 1 tbsp of miracle whip and crumbled bacon and the stuffed that back into the eggs - oh yeah, I also made a roma tomato, fresh mozzarella salad drizzled with balsalmic vinegrette - all in all - everything was tasty - Here's hoping for a little "whooshie"

                Re: What's for Dinner Tonight?

I missed the dinner post yesterday, but dinner tonight is chicken tenders ala SugarFree Sheila (recipe's at www.sugarfreesheila.com), that is:

chicken tenderloins dipped into beaten eggs (she uses eggbeaters, but I just beat up the eggs), and then thrown into a ziploc baggie full of fresh grated parmesan (I don't use the stuff in a can, I actually grate a hunk of hard parmesan cheeese). Fry it on the stove in a pan with some oil in it (I use canola), and you have chicken nuggets! Delish!

Will probably serve it with turnip salad (like potato salad but with turnips instead).
No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

                Vigilance, not perfection.

                  That sounds delish!
But just a gentle reminder - if I recall correctly miracle whip has high fructose corn syrup, sugar and starch and balsamic vinegar has sugar in it (which is why it is excluded from the allowed list).

Tonight I'm trying a slow cooker recipe from Dana Carpender's Low Carb Slow Cooker Recipes: it's salmon steak with butter and lemon. For veggies, I'll have a small salad of chopped tomatoes, cucumbers and green onions and a veggie side of green beans.

                      Re: What's for Dinner Tonight?

oh I thought that as long as I used less than 2 carbs worth - than they were okay to use... but since I'm still working through my book - it's nice of you to let me know. With the miracle whip - I used 1TBSP for the entire mixture - I only ate 1 out of the 8 deviled eggs that I made (I'm learning to stop eating when I am full) With the balsalmic vinigrette - it was not really sweet - and the label said it had 1 carb for every 2 TBSP - so I only used 2 TBSP, but the salad made enough for four servings... I am actively reading my Atkins book as I go along, so hopefully I'll stop making so many silly mistakes along the way. I never had a "whooshie" last night - but did lose .5 lb and am happy with the progress that I have made so far.

                      Thanks - Elisabeth

Well I had been getting nervous about tonight because my girls and I are going to dinner and having a girls night and tomorrow going to a spa.

Tonight dinner is at Chevy's. . one of my favorite places. .. and the chips make me weak .. BUT I have decided that I will fill up on water prior to dinner and have one of thier fajita platters with no tortillas. . so i can get all shrimp with garlic butter with a side salad and I will still be enjoying chevy's . . . . .I have to be strong to avoid the drinks though =(

There is a mention of 2 carbsworth of dressing here
For salad dressing, use oil and vinegar (but not balsamic vinegar, which contains sugar) or lemon juice and herbs and spices. Prepared salad dressings without added sugar and no more than two carbs per tablespoon serving are also fine.
but I interpret that as being that a salad dressing that happens to have no more than 2 carbs per tablespoon in natural sugars is OK - not if it has added sugars!
He clearly does say 'without added sugar'so I have steered clear of any that list sugar in the ingredients list.

                            Re: What's for Dinner Tonight?

I ended up finding that passage in my book - and will definitely try to watch my labels a little more closely. I did though, read the label on the back of the lite balsalmic basil vinegrette - and there was no trace of sugar, corn syrup or anything like that .. the ingredients were actually pretty simple - vinegar - olive oil - and basil/oregano/italian type herbs .. with the label stating that each serving (2 TBSP) only contains 1 carb - I would think that would be okay... right? I know that there are ALOT of die hard members on the board who don't agree with my laid back approach - but the truth is - I am reading the book, I am losing weight - excercizing, drinking water, and trying to adapt the "atkins" plan into my life, so that this is not just a diet this time, but a complete lifestyle change .. but I have to do this for me - and be comfortable and confident with my approach to trying to lose weight .. so if I happen to slip a little every once and a while - add a little chili sauce (which does have sugar - but I only use 1 - 2 carbs worth) to my hotdog, or a TBSP of frozen coolwhip to my coffee (decaf - which I have worked hard at making that switch too) I'm not going to stress about it - stressing about things tends to lead me down the wrong path - just know that I am conciously trying everyday to be the healthiest mommy/wife and woman that I can be. Everybody's body is so different in terms of weight gain, weight loss, bloating ... and different food, tend to affect different people in very different ways .. I think that as long as we are actively trying to be the healthiest we can be, read our books, get to know our own bodies and triggers for weight loss and weight gain, and use this ADBB site as a tool in our weightloss and maintanence efforts - we will all succeed at reaching and sustaining our goals.

Tonight I'm have chicken patty with dab of chipotle mayo and a salad made of chopped cucumbers, tomatoes, red bell peppers, onion tossed with alittle lemon juice.

Chicken patty is made by shredding cooked chicken, tossing it with alittle chopped onion and enough mayonnaise to barely hold the patty together (meaning, it should look alittle dry, but when you gently squeeze the mixture together it holds. If you added too much mayo, add more chicken, and have the leftovers tomorrow). Then baking it in a 400 degree oven until the patty is golden brown.

Chipotle mayo is made by mixing 1 cup of mayonnaise with 3 chopped chipotle peppers.
