At least 51% of your daily carbs should be from vegetables according to Dr. Atkins. So, yes, you need to eat your vegetables. They not only provide you with vitamins and minerals, they also provide you with fiber. As you proceed through the phases of Atkins, those 3 cups of Induction vegetables will be a part of your daily menu. In fact, by the time you reach Maintenance, you'll be eating about 5-6 cups of vegetables daily---alot more than what the average American eats.
Do you need to eat lettuce? No. During Induction you have a choice of 56 vegetables to eat. There is a wide variety of vegetables available to you. By the way, no where in the rules or the book does it say you need to eat the vegetables on the "salad" list raw. In fact, some of the vegetables on that list are better cooked, like mushrooms and bok choy.
