    Hi all,

    I am on Day 4 of (Re)Induction and am throwing a big BBQ with some neighbors tomorrow.

    I am thinking of skewering some beef cubes and veggies and grilling them. Could y'all please post some Induction-friendly BBQ marinades, also some ideas of what veggies I can add to my BBQ skewers? Also, are there any Induction-friendly desserts (ok, not exactly sweet desserts, but more like pre or post-meal snacks) that I can prepare?

    We're having a bbq on Sunday for my dad's birthday! I have a mix of carby and low carb foods. We're doing a veggie tray with ranch dip (that's always popular, right?), tortilla chips (regular and LC) with a habanero salsa and a dip made with cream cheese mixed with an onion pepper relish from Harry & David's (SO good, but not really LC). I'm also going to do garlic herb cheese topped with grilled shrimp on both toast points and cucumber slices/endive leaves so people can choose. I like the idea of having a regular and LC version of the same thing, then nobody feels left out. One of my favorite appetizers is stuffed mushrooms - can be very Induction friendly but everyone loves them. I make mine with cream cheese, shredded Italian cheese, Italian sausage, garlic, and herbs & spices.

      Frankly, any veggie on the Induction Acceptable Foods list can be grilled--including the lettuces. So let the list and your imagination be your guide.

      I'm not a very "marinade" person, because I think most marinades only succeed in masking poor quality meat. So I stick to very basic flavorings like mashed garlic and chopped herbs.

      As for desserts, I often have cheese. For your guests, you might want to provide a fruit salad.

        good thread, i love bbq. You can put liquid smoke on your meat before grilling with your herbs like not2late said. fix some faux potatoes done with califlower, watch your serving though. make salsa and use on your meat instead of bbq sauce. have bottles of water with hint of fruit essence no sugar. the skewer thing is on point!!! get some shitakes/reg. mushrooms and all the induction friendly foods. Get some cheese that you've never had before and put it on a tray and get some deli meats, as a matter of fact you can make some asparagus roll ups. Get some pickled asparagus or grill some and roll thinly sliced grilled steak around them. Don't eat the noodles. I'm going on and on. But I don't know of any marinades but the liqud smoke in the bottle in the grocery store. Good Luck, let us know how you do and it goes!!!!

          I absolutely love grilled asparagus.... the only downside is portion control.... they're soooo tempting. by the way I've never liked asparagus, and dont like them any other way.... but grilled! amazing!

          also, here in costa rica people sometimes marinade beef in coca cola. it tenderizes the meat and gives a great taste.
          last week i was getting set to do that, when i realized i didnt have any diet coke in the house... so i used diet ginger-ale! tasted great. i only used about 1/4 cup for 2 pounds.

            Thanks, everyone! I printed out the legal induction food list and will definitely grill lots of veggies tomorrow. I love mushrooms, peppers, tomatoes and asparagus. I will most likely get those tomorrow for the BBQ. I'll also save some for snacks and meals for the next week. Also, what is liquid smoke? Is that easily found in supermarkets & grocery stores?

            By the way, jimenitayo, the hub and I were in CR last year. We rented a car and drove all over, and we absolutely loved the country! You're so lucky to be in such a gorgeous country right now, I am jealous!

              yeah......... it's gorgeous down here... i always miss it when i'm gone. I'm moving to portland this fall for school, and I'm nooooooooooot looking forward to the weather...

              you can find liquid smoke in lots of plaes, i even get mine at the local dollar store, it's great. but beware, a little goes a long way!

              if you're firing up the grill make sure you have lots of extra meat handy, it's great to keep in the fridge for leftovers throughout the week.

                Yippee!!! I'm so glad you're getting the veggies ready to grill them up! Like J said the liquid smoke can be found in many places, and a lil bit does go a loooong way . Now J you've started up something with the marinade, im going to try it too, im a bit excited because i love tender meat and it sounds great!!! Heres a pic of one brand of the liquid smoke:

                    Oh yes it is induction friendly, the only thing my family uses on our bbq before grilling and it makes it taste like real bbq should!! I've always got raves. Use your spices and salt along with it because it just adds the smoke flavoring no salt. I hope you have a good time tomorrow!!

                      Ahh, gotcha. We actually have one of those gas grills, so smoke flavoring sounds REALLY good! Hopefully I'll find 'em here in Jersey.

                          BBQs are so yummuy! So far when I go to one I bring potato salad and faux-tato salad. Same recipe but with cauliflower and splenda instead. And you know what? No matter how much faux-tato salad i bring, it is always gone. or someone asks to take the leftovers home.

                          I just boil the cauliflower a little longer to leech out any bitterness remaining.
                          I miss my grill though. Apartments on second floors are not conducive to grilling.

                              Cool! Thanks again, everyone! I am off to Shop-Rite. I'm gonna have to try the faux-tatoes (haha, great name) another time.

                              MommaGlass, there are small, indoor, table-top grilling devices you can use. I forgot where I've seen them, but I know they exist. You don't have to say goodbye to grilling!
