  • Convenient Induction Meals

    Hello Board!

    I am on my 3rd day of Akins and must say I am doing well. However, I am looking for more convenient and easy recipes. The following are some things to take in consideration when offering suggestions.
    • I am not the greatest cook in the world so I need simple and easy recipes.
    • I need convenient snak food items that I can eat at my desk.
    Thank you all for your help! Hopefully this thread can help other newcomers.

      I second the recipe forum here on ADBB!!!! lots of great stuff thats EASY!

      what sort of foods do you like? I found for myself.... induction was kinda fun. (sick I know) but shoot, I could have pepperoni for a snack with cheese! pieces of chicken breast or a drumstick. steamed veggies with BUTTER! After practically starving myself of fats for years... I could eat fats and enjoy them!

        If you have access to a refrigerator at work or if you have one of those insulated bags (check the stores now because they have their summer picnic stock in), you can bring a number of foods with you.

        I boil about 6 eggs on Sunday night, so I can use them throughout the week without having to prepare them every time I want a boiled egg. Eggs can be easily brought to work.

        Keep a couple cans of tuna, chicken or turkey in your desk or in the cooler/bag. It's easy to mix the canned meat with alittle mayo for a quick salad.

        Cubes of cheese are another item. As is a small container of olives or some type of veggie.

          I make an awesome spinach bisque:

          1 cup cream
          1 can chicken broth
          1 cup (or more H20)
          1 package shredded cheese (easier melting the better and smoother, I used mont. jack )
          garlic to taste
          onion to taste
          touch of ginger
          tablespoon of butter
          1 pack. baby spinach fresh or frozen
          parmaz. cheese to taste

          simmer all on low to med heat. So yummy. Lasts a long time too.

          Here is a good snack or apetizer...
          baby dill pickle cut wrapped with ham and cream cheese

          meatloaf (keeps well for days)
          pork rinds 1-2 cups crushed
          low carb ketchup OR splenda mixed with tomato paste with no added sugar
          1lb hamburger
          onion
          salt
          pepper

          Mix all together cook at 400 for about 45 min. or so depending on your oven.

          Cheese soup
          1 can chicken broth
          celery
          ham cut in 1/2 inch blocks
          onion
          (any other low carb veg. you would like to add)
          1 package cheddar cheese shredded
          2 cups cream
          2 cups water

          (use 2 cups to boil veggies until soft) mix other ingredients together. Simmer

          I also live off of oscar myer weiners with cheese.
          pepperoni with cream cheese

          sausage skillet: Scrambled eggs made iwth cream, mix onion, sausage, green peppers, red peppers, salt, pepper,and tobasco sauce

          I have more. I'll post as I remember them.

          Oh here's an easy one.
          stuffed chicken
          chicken stuffed with a mixture made up of cream cheese, onion, mottz. cheese, parm. cheese, salt, pepper, and basil

          Oh and eggplant lasgna is soooo goood.
          Skin eggplant, cut in long noodle like portions, cover with egg and porkrind mixture, grill on skillet. Layer with cheese and tomato paste sweetened wtih splenda, any other low carb veggie. mix hamburger meat with the tomato paste with a littel water. Can even add bacon for a fatty twist...

          Then there's the obvious such as taco salad.

            we have a fridge at my work, a i buy a couple of cucumbers, slice them up and take a few slices of them with me to work to eat on my break. they are really a refreshing snack for me. i also take cubes of cheese as a snack.

            an easy dinner i like to fix is to cook up some strips of chicken, add some green onions, and bell peppers. i like to buy the 3 packs at the store that have a green, yellow and red bell peppers to add a little color to the dish and then just cook it down until the veggies are heated. once i dish it out i sprinkle some shredded cheese and sometimes a little tomato or salsa. makes a nice little stir fry.

            you can also fry up some ground beef and add some spices like cumin and red pepper, even some garlic or chili powder. also add some onion while the meat is cooking. it's an easy way to make taco meat and then add whatever toppings once it's cooked. i usually add lettuce, tomato, and cheese.


            those are just a few simple recipes that my DH and i fix on a regular basis.

              Good Snacks Items: Hard Boiled Eggs, Deviled Eggs, Celery with Cream Cheese, Sugar Free Jello w/ cream

              Easy to make items would be any salad: Chx Ceaser is easy, just fry up the chicken and cut the romaine and pour on the dressing, Tuna salad is easy. Taco salad is easy! Egg Drop Soup is easy to do, but it's getting warm out, so might not be too appealing. Just "search" through the posts, you will find some wonderful EASY ideas!!!!

              I like to keep things really basic when I am doing induction....I don't really toy with the splenda, low carb products, anything that is not basic form. I'll allow that stuff after induction....

                I keep a back of goodies in the fridge here at work. In it is a bag of romaine lettuce and my low carb dressing, block of cheese, and a bag of pepperoni. I like eggs for breakfast and you can make fresh scrambled eggs or an omlet in just a couple of minutes in the morning. Then I bring leftover meats from dinner the night before to throw in a salad. The other day we had Subway Party Sandwiches here at work. I had to order it all so I just told them to leave all the veggies on the side. I brought chicken from home and for lunch I just added some of those veggies to my lettuce and dressing I had in the fridge and thru that chicken on top. Monday night we had baked fish and shrimp in garlic butter for dinner. There was shrimp leftover so I brought that for lunch just put it on top of my lettuce for a shrimp salad. Night before last we had thin sliced steak and the next day I brought that with my eggs in the morning for breakfast. I snack on the pepperoni's and cheese if i get hungry in the afternoon. Sometimes I bring boiled eggs too. I just make sure I have stuff here at work I can eat and stay on plan. Since I eat salad of some sort for lunch most days my dinners at home are pretty simple. Bake, broil, grill, or fry up some kind of meat and fix a cup of veggies. I also keep pork rinds and sour cream or salsa dip at home in case I need a snack when I get home before dinner time.

                One of my favorite things to do for dinner is make a bacon cheese burger (no bun of course), make up some turnip fries (just peel, cut and fry a turnip like a french you would a potato for french fries), and this not good all the time so I do it rarely I have an atkins chocolate shake. Now you can't beat a burger, fries and a shake and still lose weight. haha

                  Thanks everyone for all of your help. I generally have been eating my breakfast at work and go without food until around lunchtime. Thanks for all the suggestions though.
