  • fav snacks on induction

I'm on day two of induction and was wondering what everyone likes to snack on during induction or what quick meals they like to have.

This is my first time and I'm looking for some new things.

I'm from the uk by the way.

Snacks can be anything from the Acceptable Foods list. Just make sure your snacks and meals are combinations of fats/protein or fat/carb. So things like hard boiled eggs, slices of roast beef, cheese (just count your snack towards your daily cheese limit), vegetables and a fat-based dip are all acceptable snacks.

Quick meals really depends on your organizational skills. I typically cook about 6 or 7 chicken breasts during the weekend. I store the extras in the refrigerator so during the week, I have cooked chicken to add to quiche, omelettes, salads, soups, etc. Also ground meat--sautee it, store it in the refrigerator, during the week you can season it different ways. For example, add a taco or chili seasoning to it for a taco salad.

Eggs provide "quick meals" too. One of my favorite "egg" meals is a warm arugula and endive salad with a poached or fried egg on top.

I can't beat a cheese cube. I buy 8oz blocks of cheddar and cut it into 1 inch cubes. When I am hungry, I pop one. It's thick and luxurious and makes me feel like I've eaten something naughty. lol. I usually have two a day. Sometimes though, I have a celery stick with an ounce of cream cheese spread out on it. Satiny yummyness.

It's all about finding what does it for you. If you are a veggie type person, then probably a veggy type snack will hold you over until your next full meal. If you are a cheesy person like me, then a cheese cube will do it. I would stay away from any sweet type snacks until you have completely finished induction and know your body a little better. Also, don't forget your multivitamin. Find a good one with a high percent of Chronium. It'll help with the cravings. I wouldn't go out and just buy chronium supplements because your body really needs the multivitamin instead of just the one.

Just keep in mind that a snack is not a meal. Some people get the idea that just because they are on Atkins they should be eating a huge steak everytime they get hungry, lol.

Oh man, my mouth is watering. hahaha. We should run one together! I swear, I have to have at least one cube a day. Once I have it, everything is right with the world.

There is nothing quite like melted muenster on corned beef with lettuce and tomato on some hogie bread soaked with oil and vinegar. Memories!! That used to be my favorite lunch pre Atkins. Oh man..I should stop talking now!!!!

              Re: fav snacks on induction

I've had my same "go to" snacks and meals since the beginning with Atkins.

Usually, once a week, I cook a turkey breast or beef and while I make meals out of them, I also reserve some of the leftovers for snacks. A slice of turkey with a piece of cheese helps me fend off any hungry feeling and keeps my blood sugar on an even keel throughout the day.

I make quiche muffins and freeze/refrigerate them. I'm back to making twelve at a time and I heat them up for a breakfast on the go or for a snack.

Other snacks include tuna and mayo with celery or lettuce roll-ups, pepperoni and cheese, deviled eggs, cream cheese and celery, buffalo wings or buffalo chicken.

Quick dinners can be as simple as hamburger with a slice of cheese and sauteed mushrooms and peppers. Sometimes I mix hamburger and spinach with cheese and onions and grill or broil them. I have corned beef with sauerkraut on it and a slice of swiss cheese cooked under the broiler for a few minutes. I make ahead the Biker Goddess pizza shell and freeze them. That way I can just take one from the freezer, top it and that and a salad is a nice dinner for my husband and I. Omelettes are also a great way to get veggies, fats and proteins.

Recently, because of an injury, I wasn't "in control" of my kitchen or food prep and was frustrated by it. This really hit home for me how key the planning aspect is in making good choices with Atkins. Make a list and stick to it until it becomes second nature.

              Best wishes.

thanks everyone. i bought a lovely looking jar of sausages with only 1.5 carbs in the whole jar, then dropped them on the way from the car to my room.

                      they excited me too much.

they cost me a quid too! i'm only a poor student, that means like.. 10% of my life savings is gone.

                        Sweet Sadie and others ...

Here's the pizza recipe I suggested. Make sure you put all the ingredients you use into a carb calculator like Fitday. I eat about 1/3 of the pizza with a salad and find it satisfying.

This recipe was graciously shared by Biker Goddess when I first joined the ADBB. During my early Atkins days, when I had been eating way too many pizzas for way too many years, this recipe helped me kwell the desire for pizza. I don't eat tomato sauce, so I leave out the sauce and it is still positively delicious. My husband and I do not miss pizza anymore.

For those concerned about the amount of cheese, I use three glass dishes and spread the ingredients to make three pie shells. They freeze nicely and I always have a shell or two for a quick lunch or dinner.

                        4 oz softened cream cheese
                        4 eggs
                        1/3 cup heavy cream
                        1/4 cup parmesan cheese (grated)
                        1 tbs chives
1/2 tsp Italian or pizza seasoning
2 cups shredded cheese (I use mozzarella /cheddar mix) 1/2 tsp wet garlic or 1/4 tsp garlic powder
1/2 cup lowest carb tomato or pizza sauce
                        1 cup mozzarella cheese
Toppings to taste (I use pepperoni, sausage, green olives, whatever!)

Beat together cream cheese and eggs till smooth.
Add cream, parmesan cheese and spices.
I use 2 or 3 - 9 inch round glass pie plates and spray them with oil. (Original recipe calls for a 13 X 9 inch glass dish.)
Put 2 cups of shredded cheese over the two or three dishes and pour egg mixture over the cheese. Bake at 375 for 30 minutes.
Spread with sauce (if desired) and then add your toppings.
                        Cover with mozzarella cheese.
                        Bake till browning and bubbly.
Let stand for 5 minutes or so.

This recipe will be 6 "Egg Muffins". They are quiche like in consistency. They also freeze well after baking and cooling.

                              5 well beaten eggs
                              1/4 cup cream
                              1/8 cup iced water
6 heaping teaspoons grated cheddar or colby
                              1 teaspoon parmesean cheese
                              pepper to taste
                              Mix together thoroughly.

Mound no more than an 1 heaping teaspoon of grated cheese in each of six sprayed muffin tins. (Tip: Home grated cheese goes further than pre-grated, packaged cheese.)

Add crisp bacon or diced ham, sausage, peppers, left over veggies to muffin tins topping with some remaining cheese. Pour egg mixture over cheese and "toppings".

Bake at 350 for 15 minutes. Can be refrigerated and warmed up later.
