    Re: fav snacks on induction

These sound wonderful. I'm going to make a batch to have for this week.

    Thanks!

Last night I microwaved a 1 pound bag of frozen chopped spinach (didn't add water) and when it was good and hot I added about 4 to 6 tablespoons cream cheese and mixed it up until all melted plus salt to taste.

Very very good, everyone loved it! This is a easy creamed spinach I've made for years but always felt guilty for eating - well, not anymore! This is Legal on Atkins!

Fresh Goat Cheese inside of endive leaves, with a few olives and some sliced precooked gourmet chicken or turkey sausage (check label to be sure there is no more than 1 carb per large link)

        Microwaved pork rinds.

        Melted mozzerella cheese

        Fried eggs

I can't wait to get off induction to have pork rinds.

This is my favorite snack (So far) that I have everyday! - - JELLO! Dr. Atkins suggests this for dessert on page 131. He actually says: "Flavored gelatin made with sucralose and topped with whipped heavy cream."

I just use Jello which is made with aspartame, I don't know where you'd find the kind flavored with sucralose. I tolerate aspartame just fine but know it's an individual thing.

I mix equal parts softened cream cheese and sour cream with smoked salmon. To limit the recipe to what I am allowed on Induction, I just use 1 ounce cream cheese and 1 tablespoon sour cream.
I mix it with a spoon so that the salmon bits stay chuncky...I can taste it better that way. I cut a few cucumber slices (about 4 thick ones) and hollow out the middle slightly. I then stuff the mixture inside. I eat this for a snack if I haven't already had salad carbs, or I've had it for lunch (just yesterday actually) with some pan seared fish.
Saw the receipe on the cooking channel..."Almost Homemade". She was making finger foods for a wedding.

I know huh...I've had weak moments watching that channel! Normally, nothing is Atkins/Induction friendly on that channel. I don't know how I happened upon that particular show since I don't normally watch it. Was able to stay strong though!!!

                  Quick and easy!

One slice of lettuce for wrap, little dab of cream cheese, 1 pepperoni. Roll it up and voila! Yum!

                    I've found babybels!

Do you get em in North America?
Lil individual cheeses wrapped in their own wax, like Edam?
They now do a cheddar variety too, and they're yummy!
                    Nice, handy little snack.

I also make the mascarpone cheese, splenda and cocoa powder stuff which is dreamy. A couple teaspoons of that takes away any cravings.
