    Can anyone please explain why we cannot have carrots during induction? Just pure curiosity.

    10/03/06- Im in a size 14 jean!!!!
    (Modified OWL-moving up rungs for convenience when travelling, keeping carbs moderate)
    Foods I cannot have-
    Black beans.- instant headache and upset belly.
    spaghetti squash mixed with tomatoes- ravenous


    I Made it!!!! TWICE!!!! (10/06 and 1/07!!!)

      Because 1 cup of chopped carrots have 12 total carb grams and only 3 fiber grams. (USDA Nutrient Database)

      Granted artichoke are listed on the vegetable list too, but alittle over half of their carbs are from fiber.

      Some folks will point out the glycemic index/load of the carrots as being an issue too. But I don't think that's too much of an issue.

            The starch in root crops like carrots breaks down quickly into sugar and thus can give insulin spikes more readily.

              Ya know something president? I never liked carrots---that's one of the few veggies I never developed a fondness.
