Apparently most the alcohol evaporates during cooking, though a small amount remains... so, I'd say you shouldn't use it, technically. I remember using watered down vinegar as a wine substitute for cooking, until I got to the alcohol rung in OWL. It worked very well, but must be watered down a lot... until the vinegar tastes winey!Before and after:
