  • Grains but keeping them under 20g per day?

    I know grains aren't allowed during induction but I was wondering. I'm not much of a fan of vegetables but I know I need to get my fiber. Is eating 1/2 cup of Fiber One (Carbs= 24g, Fiber= 14g, Net Carbs= 10g) still okay, since I'll still be under the allowed amount of carbs per day?

    If you plan on doing Atkins and induction then I am afraid the answer is no, but don't lose hope as there are many ways to help with fiber and veggie intake. Don't be afraid to get experimental. You don't have to sit down and have a salad every day. Try slicing some jiccama and sautéing it in butter, Splenda, and cinnamon for a baked apple taste. You can also take some softened cream cheese, green onions, garlic salt, and sour cream and mix it well before pouring it over 16 oz. of cooked broccoli or cauliflower and placing it in the oven for 15 minutes. Mashed turnips, spaghetti squash alfredo, garlic spinach, stuffed mushrooms... the options are endless. Don't be afraid to use your veggies in nonstandard ways. You will be amazed when you have to start watching your portion control because they are so damned good.

    Also, flax flat bread is a wonderful way to increase your fiber intake while maintaining induction and it couldn't be easier to make --

    3 Tbsp. Ground Flax Meal
    1/4 tsp. Baking Powder
    Pinch Salt
    Dash Onion Power
    Dash Garlic Power

    1 Egg
    1 Tbsp. Butter
    1 Tbsp. Water

    Mix the dry ingredients in a bowl. Melt the butter in another bowl and add the egg and water, beating the mixture well. Add the dry ingredients to the wet and again mix well. Pour the mixture into a greased 9" glass pie "tin". Pop it in the microwave for 3 minutes and viola! You have a wonderful bread substitute that can be used with hot dogs, tuna salad sandwiches’, etc. Please note -- you have maintain your flax intake per the book when using this recipe.

          Grains are overrrated, in a nutritional sense. Marion Nestle, a nutritional authority in the US, wrote in her book "What to Eat", that the reason why nutritionists favor grains is because they supply the majority of dietary fiber Standard American Diet. Later on in the book, she states that the standard American Diet is deficient in vegetables/fruits. So basically, nutritionists want us to eat grains because we aren't eating enough vegetables/fruits.

          If you do a nutrient comparison between 1 serving of a grain product and 1 serving of a veg or fruit, the veg and fruit have more vitamins and minerals. And depending on the veg/fruit, they have the nearly the same amount of fiber. Plus, most vegetables and fruits aren't made with hydrogenated oils nor have preservatives and other fillers added to them.

                Na. I wrap my sandwiches with lettuce instead.

                OR I take my thin shaved turkey, etc. and a thin cut strip of cheese and spread a bit of mayo on them. Then I put a dill spear in the middle and roll the whole thing up around the pickle. Stick a toothpick in the middle and it holds nicely to make a quick lunch or snack. My kids will even eat them with me!

                  I make any sandwich I used to make pre-carb and wrap it up in lettuce leaves. Much better in my opinion.

                  There's this awesome sub shop here...I go order their subs, bring it home, ditch the bread, roll it up in a lettuce leaf and go to town. Tastes even better without the bread.
