Anything that you would eat for breakfast or dinner is fair game for lunch:
Omelettes/frittatas
Chops (pork, lamb)
Cutletts (chicken, turkey, etc.)
Vegetable salads (as opposed to green salads made of lettuce)~Megs~

I'm having mince cooked with chillies, pesto (red and green) and mushrooms and a little onion and it's just fab!!!!!!!
I also stick chicken breasts in the oven and pour over a mixture of olive oil, chillies, garlic, pesto! again! and cook for about thirty and they are so moist and delish! and you don't have to do anything.

slice jicama like bread and then put a cream cheese filling inside
you can do the same with big red bell peppers
or stuff in celery
you can make cream cheese dip by blending cream cheese with fresh chives, (or any fresh herbs you like) minced olives (any kind black green calamata whatever) ..or capers.. parsley ..Kosher salt and fresh cracked pepper
you can also make tuna, egg, or chicken salad and then stuff into veggie slices or dip the sliced veggies in it
make some guacamole (recipe in the cooking thread) and dip veggie sticks in it....
cheddar cheese melted on a thick jicama slice in a microwave at work is good sprinked with New Mexican dried red chile

I love cabbage...I fry it up with a few onions, salt and pepper, and red crushed peppers. It only takes a few minutes to prepare. I usually make a whole pan so I can have more veggies for later. Then choose a meat to go with it. I like beef sausages...the ones I get are like 1 carb for 3 ounces, I believe.

I love eating tuna salad (tuna from a can (or i use the packets now) mayo and eggs), olives and cheese. Is one of my favorite lunches. They go really well together.
Another one of my favorites is what I call cucumber sandwiches. I just cut cucumbers into slices and put cream cheese on one slice and add another slice to that. Yummo! MMMM. It is really good. And not like really heavy on the days you feel like not eating alot.
