Last night my hubbie made dinner and it was so good. He took some boneless/skinless chicken breasts and used a meat tenderizer to pound them very thin. He took some pork rinds and crushed them up in a zip lock bag until they were really fine (kind of powdery), mixed them in a bowl with some parmesan cheese (from a can). He dipped the chicken breast in the beaten egg, coated it with the pork rinds and fried it in a pan. I had this with a salad that consisted of lettuce, green peppers, cucumbers, cut up cheese and ceasar salad dressing - It was so delicious.
Today I'm going to make some mini meatballs with ground beef and old bay seasoning but I'm going to cook them by placing them in a cooking pot with beef broth and simmering them until they are done. This will be supper along with fauxtatoes and some green peppers. I eat a lot of green peppers as they have a higher veggie carb counts compared to lettuce which you'd have to eat a ton of to get a carb.
My husband isn't on Atkins but we take turns cooking and he's been very supportive by trying to figure out what we can do to make my induction meals more appetizing. I never realized you could do so much with pork rinds and cream cheese
We're also going to try the same chicken recipe but add sliced ham and cheese inside and roll them up to make chicken cordon bleu.
For snacks I'm going to mix cream chesse and olives together to make a spread to put on my celery - YUM! I find that crunchy foods make me feel more satisfied.
No matter what anyone tells you - Atkins (Induction Phase in particular) does not have to be boring. If you're like me and plan on staying on extended induction for awhile then you have to experiment with your meals or you'll get bored and risk giving up this WOE.
There are so many great induction friendly recipes out there or have fun experimenting with your own and please share as I love trying new things.
I feel so good - it really is amazing what detoxing can do for the body!
If you're just starting induction, please stick with the "Icky" feeling you may have the first few days as it will pass and you'll be zapped with a big bolt of energy. It's also amazing what drinking all that water can do for your complexion. Glowing at (almost) 42 is wonderful!
