  • Best Induction Dinner Ever!

    Last night my hubbie made dinner and it was so good. He took some boneless/skinless chicken breasts and used a meat tenderizer to pound them very thin. He took some pork rinds and crushed them up in a zip lock bag until they were really fine (kind of powdery), mixed them in a bowl with some parmesan cheese (from a can). He dipped the chicken breast in the beaten egg, coated it with the pork rinds and fried it in a pan. I had this with a salad that consisted of lettuce, green peppers, cucumbers, cut up cheese and ceasar salad dressing - It was so delicious.

    Today I'm going to make some mini meatballs with ground beef and old bay seasoning but I'm going to cook them by placing them in a cooking pot with beef broth and simmering them until they are done. This will be supper along with fauxtatoes and some green peppers. I eat a lot of green peppers as they have a higher veggie carb counts compared to lettuce which you'd have to eat a ton of to get a carb.

    My husband isn't on Atkins but we take turns cooking and he's been very supportive by trying to figure out what we can do to make my induction meals more appetizing. I never realized you could do so much with pork rinds and cream cheese

    We're also going to try the same chicken recipe but add sliced ham and cheese inside and roll them up to make chicken cordon bleu.

    For snacks I'm going to mix cream chesse and olives together to make a spread to put on my celery - YUM! I find that crunchy foods make me feel more satisfied.

    No matter what anyone tells you - Atkins (Induction Phase in particular) does not have to be boring. If you're like me and plan on staying on extended induction for awhile then you have to experiment with your meals or you'll get bored and risk giving up this WOE.

    There are so many great induction friendly recipes out there or have fun experimenting with your own and please share as I love trying new things.

    I feel so good - it really is amazing what detoxing can do for the body!

    If you're just starting induction, please stick with the "Icky" feeling you may have the first few days as it will pass and you'll be zapped with a big bolt of energy. It's also amazing what drinking all that water can do for your complexion. Glowing at (almost) 42 is wonderful!

    Those all sound delicious - but I think the BEST part about that dinner is having your DH do the cooking!

          Now, posts like these are what I LOVE to hear! This is what is going to keep you on track prfctlildvl!!!! Keep workin the plan girl!!! There is NO REASON for food to be boring or tasteless!!!


          Good for you on the peppers. I love the red and orange and yellow ones. Did you know they have more vitamin C than an orange does? And avacados and greens have more potassium than bananas? WOOHOO go veggies go!!

            I have a four year old who loved it and I think it woudl make great bite size chicken nuggets.

            My meatballs are all made and I've put them in the oven to get crispy before I let them simmer in a pot of beef broth. Can't wait for supper. I made enough to keep in a container for quick snacks. I could even put them in the microwave and add a bit of shredded cheese on top for a mini cheeseburger snack!

            I love taking recipes and trying to make them induction friendly. I think the majority of people who are not successful on Atkins just don't make it through Induction because they get in a rut with their food especially if you have a bit of weight to loose and do an extended induction.

            I have a recipe for chicken divan that calls for chicken breasts, broccoli, cheese and broccoli soup and bread crumbs so I'm thinking of trying that next by substituting shredded cheese and heavy cream for the soup and pork rinds for the bread crumbs. You usually serve it over rice but with enough broccoli you wouldn't need the rice.

            If anyone has any induction friendly recipes they'd like to share - send em my way. I love trying new things.

              I use cauliflower as a substitute for rice. I steam it and take a fork and "shred" it until it looks like rice. I'll even put seasoning on it to make it taste like "yellow" rice.

                You can also make spanish rice and fried rice using cauliflower instead of rice

                      Adena, I just read the lasagna recipe and it sounds delicious - I can't wait to make it!

                      There are certain foods you just miss during induction and, for me, Lasagna is one of them. It's nice to have an alternative.
