  • What's for Lunch????

    My lunch is spicy chicken soup leftover from last night. It's basically a tortilla soup without the tortillas and for this recipe linked below, it doesn't have any cornstarch:

    I have leftover roasted cauliflower with bits of real bacon. I chopped up leftover chicken and put it on top. It's topped with a little shredded sharp cheddar, and a dab of sour cream. It's sort of like a loaded baked potato, but not really.

      I have already had mine, I had my usual salad, but with the following -

      Mushroom
      TOmato
      Cucumber
      Lettuce
      Dressing
      Ham
      Chorizo Sausage

      It never ceases to amaze me of how easy and how effective this ***diet*** is!!




      I have since re-gained a bit of weight, but that is soon to be coming off again!

        hmmmm...chorizo sausage. I'm going grocery shopping after work tonight. Gotta add that to my list!

              Lettuce with leftover ham, shredded cheddar, shredded hardboiled egg and ranch dressing. Can't seem to find any good tomatoes in this town lately. My salad is very good nonetheless.

                Yep, Rich. I love chorizo. I can get a hold of 'domestic' chorizo here for relatively moderate prices. I have imported chorizo and Serrano ham on my wish list.

                    An organic spring mix of greens, topped with black olives, turkey tenderloin that was seasoned with Penzys Northwoods and grilled, and blue cheese dressing.

                        Wednesdays are "potluck lunch" day at my office. I work in a small office with about 7 people. Anyhow, everyone brings something in. I brought meatballs in a tomato sauce. I peeked in the frig and saw a grilled veg salad (looks like grilled red and yellow peppers, egg plant, and zucchini), a broccoli salad, tuna and mayo, a casserole-thingy, and a ham and cheese ball.

                        I'll have to scope out the casseroles and the ham and cheese ball, but it looks like I can eat the tuna, my meatballs, and the salads.

                        What about you?

                              Good question... my kitchen is being redone & I have no countertop or way to heat things up, lol!!! I think I'll make tuna salad over greens. It's always yummy. Tomorrow, I get my kitchen back (and better than ever). Woohoo!!!
