There are tons of them on this site:

    http://www.genaw.com/lowcarb/main_dish_recipes.html

Scroll down about 1/2 way and you'll see a section called "Meatless Dishes" and there are a bunch of crustless quiche, omelette and fritatta recipes.

I agree with Joy! I've made every single one of the quiches on Linda's site . . . and they are all yummolicious!

I just use a regular quiche recipe and I don't add the crust and I substitute cream for the milk.

Re: Induction friendly crustless quiche recipe anyone?

Maybe this one is like what you had? You could cut down on the salt if you like , the bacon would be salty and may be enough. I've tried these recipes and haven't find a single thing that wasn't delicious. I've even been copying them and making my own cookbook.

                  BACON & CHEDDAR QUICHE
                  3-4 slices bacon, chopped
                  6 eggs
                  1 cup heavy cream
                  1/2 teaspoon salt
                  Dash pepper
                  8 ounces cheddar cheese, shredded

Fry the bacon until brown and crispy; drain on paper towel. In a medium bowl, whisk the eggs. Add the cream, salt and pepper; whisk well. Arrange the cheese and bacon evenly in the bottom of a greased 9 1/2" glass pie plate. Pour the egg mixture evenly over the cheese. Bake at 350ยบ 35-40 minutes, until a knife inserted in the center comes out clean. Makes 6 servings
                  Can be frozen
