Breakfast can be anything on the Induction Acceptable Foods list. Think outside of the box.

I often eat leftovers for breakfast. Other people boil a dozen eggs at the start of the week and store them in the refrigerator for grab-and-go meals. Other people make crustless quiches and slice a wedge off for breakfast.

The main thing is if you know you don't have time in the morning to prepare a meal, take some time in the evening or on a weekend to make breakfasts (crustless quiches, boiled eggs).

And yep, you have time to make eggs if it's eggs that you want.

Swing by Walmart or the grocery store and look for one of the little plastic microwave egg pans/omelette pans. Crack the eggs, add a few drops of water, close the lid, cover with a papertowel, and nuke it for 1-2.5 minutes. Voila. Eggs.

Microwave omelette pan- Crack the eggs, add water and mix 'em up, toss in whatever you want, nuke it for 2 minutes or so and voila.. super quick omelette.

If you take the time to prep things and stick them in the fridge, you'll find your mornings go a *lot* quicker. Like not2late said - think outside of the box. One of my favorite breakfasts is left over taco salad.

Ditto on left overs. Left overs are my friends and saving grace through out the week

Leftovers are awesome! I also like to keep "finger" foods handy and mix and match my protein/fat/carbs. I keep veggies like celery, jicama, brocolli, cauliflower, green peppers, and cucumbers cut up in sandwich bags. I also have pepperoni in small bags, and I'll buy a large package of chicken tenders, grill them, and store them in individual-serving-size bags or foil. Beef jerky is great too, as long as it's stuff you make yourself and NOT that crap from the supermarket. Cheese sticks are GREAT! It's exactly one ounce of cheese, and they come in mozzarella, colby jack, cheddar, pepperjack, you name it!

This way, I can grab a bag of cukes, pepperoni, and a cheese stick. Or perhaps chicken tenders with ranch and celery. Or beef jerky with pepperjack and jicama. Mix it up!

                Re: need help with breakfast

That's right...Brook's fav breakfast is taco salad! I forgot.

Along the same lines as what Brook said, sometimes I saute alot of ground meat on the weekend. I season it plainly with just salt, pepper and maybe a few cloves of garlic. That sauteed meat becomes the basis for alot of weekday meals (tacos, a fast chili, etc.) I use it for breakfast too: put about a 1/2 cup of the sauteed meat into a microwave safe bowl, push the meat to the side to form a hollow in the center, crack an egg, top with cheese. And microwave until the egg is cooked, everything is hot and the cheese is melted. If I don't feel like having an egg, I just top the meat with some cheese, nuke it and have that (A squirt of hot sauce on top is good too!)

Whenever I can get good avocados, I have half an avocado with a spoonful of sour cream and cold chicken for breakfast. Likewise, if I make stuffed mushrooms, I always set a few aside for breakfast.

So think outside of the box. Breakfast doesn't have to be eggs and bacon. It could be anything on that list.
