  • HELP! Can I eat this on induction?

    Ok, previously I asked if I could eat tofu on induction and thankfully the answer was yes, but I have one more question, can I eat those noodles made from Tofu? They're called something like Shatakari noodles, and are made mostly from Tofu but my only qualm is that they have also yam flour in them. The carb content is 2g, 1g of fiber so net carb is 1g....does anyone have an idea?

    Just to say because if so, that's absolutely fantastic and everyone should run out and buy them because they taste exactly like those chewy rice noodles and it means you can eat pasta, freely, finally!

    Wow those sound great. I think they are probably safe but I will wait for a resident experts opinion. But if they are legal I cant wait to try them.

      They're Shirataki noodles I believe, and they are induction safe, though eating too many might cause intestinal issues I've read =P. Just search the boards for shirataki and you should find some threads about them. I'd love to find them in my area, but so far all searches have turned up failures.

        My boss used to write to Fred Pescatore, MD. She asked about shiritake noodles. He said they were fine but limit them to no more than one serving. So check the package for the serving size.

        Dr. Pescatore was the Associate Director of the Atkins Center for Complementary Medicine during the 1990s. So if it's anyone who knows about Atkins, it's him.

          OK...I've been on this board long enough to already know this, but seem to have learned this just today.......You CAN have tofu on induction??? Maybe I need to read around the board more....
          You can have these noodles too????

            Tofu is the 'soy cheese' mentioned in the Cheese footnote of the Induction Acceptable Foods list. A long time ago, tofu was called soy cheese because the process to make tofu is similar to making dairy cheese. Anyhow, I have cookbooks from the 60s and 70s that call tofu 'soy cheese'. In the early 2000s, vegan companies began making a soy-based imitation dairy cheese---that is called soy cheese too.

            In the 1992 DANDR, Dr. Atkins mentioned "soy cheese (tofu)". The Dr. Atkins New CArbohydrate Counter states that tofu is allowed during Induction.

            So tofu/soy cheese is allowed during Induction. The only caution is that the number of carbs varies brand to brand and type to type. I've seen tofus with 1 carb per serving (serving size being 1 ounce), I've seen firm tofus made by different companies that have different carbs for the same serving. So read those labels carefully.

              Thank you lord!!! This is the low carb answer to pasta, something that I'm a DIE hard fan of, this is like the best news i've heard since i started low carbing (approx 5 days ago).

              And i had some noodles yesterday just sauteed with garlic and olive oil and they are DELICIOUS!! And SO low carb AND low calorie. ONE serving (which is admittedly small) is 3g carb but 2g fiber, so ONE NET CARB, and only 20 calories!!!

              I avidly advocate everyone go buy them!

                Throw in some Broccoli and chicken and sounds like a perfect meal! YUM. Too bad I can not find these around here!
