  • Who needs an easy, delicious, perfect for induction breakfast idea??

    As the new year starts, I find myself wanting to get rid of these last 30-35 pounds.

    One of the biggest hurdles I had to overcome, was to eat a regular, Atkins friendly breakfast every day. To eat before noon was always an accomplishement for me, and I find that if I eat breakfast regulary, I lose weight faster and also feel better all day long.

    Over the Xmas holidays, my sister inlaw (who ironically lost 70lbs on WW and since Sept she has gained 40 of those back) served up these YUMMY ham and egg gems. She served them with toast, but eaten alone they make up what I call the most perfect induction breakfast EVER!

    Not only do they contain less than 3 carbs each..... they are DELICIOUS and easy and really don't make ANY mess or fuss to prepare.

    So, my gift to you inductioneers:


    Ham and Egg Gems

    1 Slice of Black Forest Ham about the size of your face (sugar free, check the ingredients, all brands are different)
    1 Large Egg
    1 TBS Heavy (whipping 35% Fat) Cream
    1 TBSP shredded cheese
    S/P to taste
    non-stick spray

    time and temperature vary, so see below according to how you like your eggs


    spray a muffin tin with the non-stick spray (cooked eggs are hard to clean off without it, trust me)
    tear a slice of ham in half and line a large muffin tin with the slices:



    Crack the egg into the ham, without breaking the yolk, pour the cream over top and season to your liking.




    smother in shredded cheese:



    place in oven until done to your liking (see below) and then serve hot






    The great thing about these is you can serve them to EVERYONE, it helps with not having to make 2 different breakfasts for your family or to serve for brunch with your friends (they may want that evil toast tho.....



    If you like your eggs HARD (I use Omega 3 eggs which do not taste good when cooked hard, they take on that fishy flax smell/taste at that point)

    cook them for 30 minutes at 350°

    if you like your eggs softer.... cook them at a higher temp for less time, I find a large egg gets cooked to a medium soft at 380° for 20 minutes. But eat them quickly so they do not keep cooking.

                  Wowee! Isn't it funny how something so simple can be created? I learn more and more and more awesome recipes and this is one I can't wait to try! I LOVE a nice thick slice of ham with eggs over medium and cheddar over the top. I'm sure the cream will be yummy!

                    Here is a quick breakfast idea, I too hate to get up and cook in the morning so I do this..
                    I make my omlette the night before. Put it in a freezer bag thats microwavable, get up the next morning and just pop that lil sucker in the nuke till done.
