  • Veggie suggestions for induction

    Hi, I'm going to restart and "clean" induction on Monday. I've been really good but I want to be really good. Does any one have any suggestions for induction veggies. I've been eating a lot of spinach (on sale at ACME), I had collards a few times this week. What else would be good? Thanks!

    Take a head of caulfilower and cut it up in chunks. Steam it until it is REALLY cooked. Drain it(shake water off). Put it in food processor(or use a fork or staf mixer) and add 1/3 cup cream, 1 teaspon salt, 2.5 tablespoons butter, 1 chicken broth cube. Mix this up for 2-3 minutes. You will never want to eat normal mashed potatoes again! You can play around with this recipe by using cream cheese, parm cheese, etc.

    With spinach I like to put some butter in a pan and sautee the spinach. Then add heavy cream. Then parm cheese. Cook until done. I do the same with mushrooms.

      The thing I had trouble with during induction was eating enough SALAD veggies...I loved the "other" veggies and had no problems with those! Luckily, I started trying new things, and found some new favorites.

      SALAD VEGGIES TO EAT REGULARLY OR TO TRY:
      jicama--tastes like an unripe pear
      daikon--a radish, with a sweeter taste, can be used as a potato substitute
      celery--celery is a great veggie to eat with dips and it pairs well with any "finger food" like jerky, wings, pepperoni, etc.
      cucumber--another great "dip" veggie
      peppers--this includes bell peppers and jalapenos. Bell peppers are great snacks--sweet and crunchy, and are great stir-fried or roasted with meats. Jalapenos are a favorite to flavor dishes, and to make jalapeno poppers.

        Any vegetable on the Induction Acceptable Foods List is fair game. As long as you follow the rules about the vegetable amounts, you'll be okay.

        Vegetables
        You can have two to three cups per day of:

        alfalfa sprouts
        daikon
        mushrooms
        arugula
        endive
        parsley
        bok choy
        escarole
        peppers
        celery
        fennel
        radicchio
        chicory
        jicama
        radishes
        chives
        lettuce
        romaine lettuce
        cucumber
        moche
        sorrel
        These salad vegetables are high in phytonutrients and provide a good source of fiber.

        Other Vegetables
        You can have one cup per day of these veggies if salad does not exceed two cups. The following vegetables are slightly higher in carbohydrate content than the salad vegetables:

        artichoke
        celery root
        pumpkin
        artichoke hearts
        rhubarb
        asparagus
        chard
        sauerkraut
        bamboo shoots
        collard greens
        scallions
        dandelion
        snow peas
        bean sprouts
        dandelion greens
        spaghetti squash
        beet greens
        eggplant
        spinach
        broccoli
        hearts of palm
        string or wax beans
        broccoli rabe
        kale
        summer squash
        brussels
        kohlrabi
        tomato
        bean sprouts
        leeks
        turnips
        cabbage
        okra
        water chestnuts
        cauliflower
        onion
        zucchini
        If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.

          I add cooked celery root (celeriac) to cooked cauliflower to make my mash and it makes a very good substitute for mashed spuds!
