I think first hing to ask is how sure are you about only liking lettuce? When I first started atkins I felt pretty much the same way. I didn't even know or had ever tried all the veggies on the list but I thought I'd probably be having just lettuce all the time too. However, soon enough I found that I was liking vegetables more and more and as I got bored with lettuce and actualy tried new things (or tried things I had had for a long long time) that I actually liked them. So I guess my point is, even if you think you only like lettuce I urge you to give everything on the list a chance as there is a good possbility you will surprise yourself.

As far as other induction legal snacks I'd recommend: cheese sticks (as long as you keep it to 3 ounces a day), meat sticks (such as pepporoni, make sure you look at the packages though and find one with 0 carbs), and for a nice crunch give Pork Rinds a try. I didn't think I'd like those but I've always loved potato chips and pork rinds did a good job replacing that niche in my diet.

If none of those work at least you can be happy if you keep in mind that induction is very temporary. Soon enough you will be able to snack on small amounts of berries and nuts, which always are tasty and good for you.

I second what Grant said - try something on the acceptable list that you haven't had before - I am willing to bet there is something besides lettuce that will become a new favorite. One thing I had never even heard of before Atkins is JICAMA! Now, I wonder why in the world this veggie is such a secret! It's got a great CRUNCH and flavor. You can cook with it, add it to salads, but I love it best raw all by itself! After a bit of not eating sugary, starchy foods, you may find that your tastes change as well - so hit your market with your acceptable food list in hand and stock up on some new veggies to try! Best wishes for success!

Re: HELP!! I need legal induction snacks

Here are a few of my favourite veggie induction-legal snacks:
Celery spread with cream cheese or pate
red or yellow sweet peppers (bell peppers?) stuffed with cream cheese or pate
mushrooms filled with cream cheese, pate or cooked meat diced with mayonnaise
radishes boiled to take the red colouring out and mixed with mayonnaise to make a mock potato salad
cucumbers hollowed out and filled with pate or cream cheese
asparagus rolled up in meat or smoked salmon
pickled gherkins (dill pickles in USA I think)) rolled up in a slice of cheese or meat
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!

pork rids! nothing serves better for me as a quick on-the-run snack or something to keep my appetite down while I'm still cooking dinner and shouldn't be licking that spoon!

Moonwish-something isn't fair here! You live in Estonia and can get things like pork rinds and splenda and I cannot! wah! Think I am going to come over for a visit. Is your guest room ready?

                Hummm snacks

cheese(3-4oz max per day though), ham and cheese rolled up and melted a bit in the microwave, deviled eggs, boiled eggs, crustless quiche, leftover fauxtatoes(you must try!), celery sticks dipped into ranch, ceasar, or garlic sauce, Linda's deep dish pizza(it is posted in the main dish section here) with a variety of toppings(meats, mushrooms, pepers, onions). Ummm could go on... My husband followed Atkins a few years ago(he is currently doing weight watchers). Before Atkins he didn't think he liked veggies. He ate only tomatoes and canned peas and carrots. Now he loves almost all veggies if prepared in a different way. For instance he thought he hated brocolli but now he loves it. It just has to be a bit "crisp" for him and not cooked to death like his mom does it. He thought he didn't like salads but they have to be fresh salad. Not salad veggies that have been sitting in the fridge for a week and looking brown. Actually his mom gave him a lot of issues when it comes to veggies! She is a wonderful cook in many ways but kills her veggies. *shudder* Try preparing veggies you do not think you like in different ways. You might be surprised.

                    LOL Maggie life isn't fair

Pork rinds I eat is a local product by the way (made by the same company producing potato chips and other crap!!!) and yum.yum-yum!!! All I can say! YUMMMMIIIIEEEE! Sometimes it just is you want some comfort food and that's it. I just try not to eat too much because of salt.
Splenda has just made itself into the market in the end of last year. And still I've only seen it in the form of little tablets to put into hot beverages... Powder or liquid arestill missing.

But - we don't have any low-carb stuff - bars, shakes, ice-cream, candies. Never seen in my life and probably I'll be old before the're here. Not that I want them. Altho some ice-cream would be nice...

I am in Denmark and I thought that we didn't have Splenda, even if it was recognised by the EU as edible 2 years ago. Anyway, it turns out that it is marketed by a company called Atwell as one of their many different sweeteners. They are all labelled 'Atwell' even if they contain very different things.

What you should be looking for as the ingredient is "sucralose", as that is the stuff called splenda in the US I believe

Re: HELP!! I need legal induction snacks

Basic tuna salad. Chuck some canned tuna (in oil) in a bowl along with a tablespoon or so of mayo (make sure it's real with no carbs), and if I've got time, I'll dice up a little red bell pepper, raw onion, or sprinkle in a dash of dried onion or cayenne pepper. Takes a minute to make, and it's satisfying.

Also, bacon. Fry some extra bacon up (find the Oscar Meyer nitrate free variety if you can... blue packaging), and toss some in a ziplock for when you need it.

High fat foods are great for snacks, because they kill further craves. If you're near a stove, try chucking a cup of fresh spinach in with a healthy dose of butter and sauteeing it for a bit. You'll be shocked how much you like spinach all of a sudden.

Oh, and to echo some of the sentiments here on veggies. Fresh veggies make you forget you ever hated them in the first place. I learned this long before I started Atkins, but it's something a large segment of society never figures out.

Sautee a few spears of asparagus in butter for 5 minutes, and then try a couple crunchy bites. Compare it to the glop you get if you buy it canned. It's not the same food.

                          Ditto spinach.

Ditto everything else that's ever been canned. Canning was developed to preserve foods in the absence of refrigeration. How it's hung on so long in a society where the fresh stuff is available is beyond me.

Frozen's not as good as fresh, but it's also a heck of a lot better than canned.

Don't forget the fat (olive oil, butter...) Everything tastes better with fat.
