Does it matter how much meat you eat as long as you don't eat too little and not get the fat you need? Since most meat have no carbs, would it matter?

Dr. Atkins warned that excess protein is converted to sugar, which is stored as glycogen and fat. So, don't stuff yourself with meat or any other food. Ketosis is a natural appetite suppressant. This is true.
That didn't mean SQUAT to me. Eating just when I was hungry wasn't a reality for me. I was (and still am to some degree -although MUCH, MUCH better about it) a binge eater. I don't need to be hungry to eat - so counting on ketosis to nip my eating in the bud would have been a recipe for disaster.
As both Megs & Miss Phode pointed out - you should eat until you're satisfied. You shouldn't eat unlimited quantities of *anything*, ever.
Sticking to the allowed foods list was never a real issue for me. I never had trouble doing that. My troubles were in learning to stop eating before I was full. I had to take it in steps. At first I would eat until I was full, but not until I was stuffed (that was new for me). Once I got more comfy with that, I started paring down how much I was eating and stopping before I was full.
If you stick to the allowed foods list and eat just until you're satisfied you'll be just fine. If you are the type of person that can count on your appetite alone to keep you in check in the quantities of food department - then awesome! You have no worries! If you're like me - it's going to take some work and some real dedication - but you CAN do it!
Unlimited anything is bad - unless it's money

General rule of thumb for success: If it requires a degree in chemical engineering to pronounce it, you probably shouldn't eat it.

It depends on which phase of Atkins you are in, but over the course of the day if you were to total your intake in calories, 30% should come from protein. I am very much like you Brooke, I am trying to learn when to say no now. Its not an easy task tho. What meat is the lowest form of protien and fat? Hmmm?..Thats something for me to investigate today.

I've found it very helpful to put all my foods in Fitday.com ... it really helps me see exactly where my calories are coming from and how much food I am eating. Plus it's very valuable for knowing how many carbs I'm getting in OWL, instead of just guesstimating. I'm sure you can overdo it on the meat.~Attek

fitday is too tedious for me. I use both, I write everything down in my notebook, or keep little notes in my pocket.
My notebook is always on the kitchencounter next to my scale, it has become second nature to write down each and every food I put in my mouth.
Mostly during that my dinner is cooking I put it all in fitday and see if I need to adjust (mostly I have to put a tbsp of olive oil in my dinner, cause my fat intake was not enough yet)
When you use fitday for quite a while already you have your own list of custom foods and such it really works like a breeze, but indeed you have to get used to it.41 year old female, lenght 5'5'' and a half

I agree with Soliwit, Fiday takes a little time. But it gets easier! As you improve your list not only is it faster to enter things, you also have a learning curve as to what foods have what in them, so it eventually is like second-nature for things you eat a lot, you already know without entering them what you consumed in terms of carbs, calories, fat, protein, & nutrients. It's an effort as valuable as taking baby steps before you can walk!~Susan
