  • Good news and a question...

    Ahh here we are. Day 8 and another 4 pounds. I love this way of life.

    Now...my question is

    Fresh spinach. I screwed up. I had a cup of mushrooms yesterday.

    And a nice salad with dinner. Only problem is, I thought (of course I didn't look it up until afterwords...go ahead yell at me I deserve it) that spinach was in leafy veggies catagory...turns out it's not. It's in the acceptable veggies which I already took in.

    I swore I read a post by Joy (Validrogue) where she said lettuce is like the worst when we it comes to vitamins and nutrients for salad veggies?

    Since it's a restart for me, I'm not 100% sure I screwed up. But now I have all this stupid bagged spinach that there is no way on earth I'll go through before it spoils....

    I hate to waste food. I actually hate waste in general.

    Anyway....can anyone shed some light on this?

    Scooter, fresh spinach is very light and bulky, do NOT beat yourself up about this. Yes, during induction, you are only allowed 1 cup of fresh spinach per day.

    But, to be *perfectly* honest, I've never sweated spinach, and have used it instead of lettuce in my salads. ESPECIALLY during OWL rung 1.

      Ditto what Joy said. I usually buy mixed baby greens for my salads, or spinach, or some other "exotic" lettuce medley that's not iceberg or romaine.

        Awesome, thanks guys! That's what I figured. It was really good and a ncie change most definately. Besides that, I've only got till next monday for my move back to Rung 1 - Good ole OWL can't wait! Woo Hoo!

          I'm eating fresh spinach from the garden as part of my salad, and according to the Atkins carb guide, 1 cup is 0.2 net carb so I wouldn't worry too much.
          If you have loads to use up try making spinach and nutmeg soup, or I could post my recipe for lamb a leekie soup which also has spinach in.
