  • I am confused...Please help.

    HI, I am new to Atkins. I am on day 7 and I have been feeling ok. I am down 10 lbs. I have a question.

    I read the book and its also posted on the website...

    "Eat no more than 20 grams a day of carbohydrate, most of which must come in the form of salad greens and other vegetables. You can eat approximately three loosely packed cups of salad, or two cups of salad plus one cup of other vegetables (see Acceptable Foods)."

    On the Aktins site it states "at least 12-15 grams of which must come in the form of salad greens and other vegetables".

    I eat the recommended 3 cups. I have salads for Lunch and Dinner. I measure everything so I know I am getting in the 3 cups. Looking at fitday for yesterday I had a total of 16 grams/carbs. My total Veggies totals 3 grams of carbs. The rest of them come from cheese, eggs, etc. 1 carb = 1 cup of Vegetables. I would have to be eating 12 cups of lettuce to come close.

    What am I missing here? It doesn't make sense. Can anyone help?

    Apparently Atkins Nutritionals changed it to 12-15 carbs from veggies. Around here, we use the 3 cups version that Dr. Atkins wrote. Another board I've been to pushes the 12-15, but I prefer to stick with what the good Dr. wrote.

    One cup of veggies doesn't mean one carb. Each veggie has different amounts so make sure you're counting them correctly.

      What I meant with the 1 cup=1 carb is... The veggies I am eating only equal up to this. I am eating off the acceptable list but is mostly lettuce for salads. I love my salads. I just want to make sure I am not missing something.

        Oh ok. I see now. No, you're not missing anything. Stick to the 3 cups and you'll be fine. You might want to try adding things to the lettuce though. Maybe some cucumber or mushrooms. Try different kinds of lettuce. Maybe make a smaller salad and eat some of the "other" list of veggies. That will help get your veggie carbs up from just 3.

          There are 54 veggies on the Induction Acceptable Foods List. 21 of those vegetables are on the "Salad" list and many of them have more fiber and more nutrients than lettuce. For example, 1/2 cup red sweet peppers has about 3.5 net carbs, 1/2 cup cucumber has about 2 net carbs.

          So broaden your "salad" horizons.
